Pork in a wine marinade

Ingredients

pork 1.5KG
salt 1 tbsp. l
dry white wine 1 cup
wine vinegar 1/2 cup
olive oil 4 tbsp. l
garlic 3 tooth
onion 1/2 pc
carrot 1/2 pc
peppercorns 1/2 tsp
Bay leaf 2 pcs
thyme 1 tsp
optional:
basil 1/4 tsp
tarragon 1/4 tsp
sage 1/4 tsp
mint 1/4 tsp
coriander (seeds) 5 pieces
juniper 5 pieces

Cooking method

  • Pork in a wine marinadeFinely chop the onion.
  • Pork in a wine marinadeCut the carrots into thin rings.

This marinade can be used for chops, steaks, and small roasts, but is usually reserved for the ham and shoulder. This marinade is designed to be marinated for a long time (2-4 days) and gives the pork a flavor similar to that of wild boar, marcassin.
Note: if you are going to marinate meat for more than 3 days, then fry the carrots with onions and garlic in olive oil over low heat before preparing the marinade.
