Ingredients

Wheat flour VS 500 g
Milk 200 ml
Warm water) 70 ml
Olive oil 2 tbsp. l
Eggs 1 PC
Salt 8 g
Sugar 18 g
Dry yeast) 7gr

Butter 70-90 gr.
Yolk 1 PC.

Cooking method

  • I have been making baguettes according to this recipe for several years, but I did not think that it was not on the site. Surely everyone has known him for a long time, but I would venture to share.
  • Wonderful, festive, flaky baguette ..
  • Sift the flour. Mix sugar, yeast and warm water in a glass. Leave for 10 minutes until the foam appears.

  • Add water with yeast, warm milk, salt and an egg to the flour. Knead a soft, elastic dough. Add the olive oil 5 minutes after the start of kneading. Knead for a total of 10 minutes until an elastic consistency.
  • Put it in a greased bowl, cover with plastic wrap and leave in a warm place for 1.5 hours. (Oven with light bulb)
  • We spread the dough on the work surface, divide it into 2 equal parts. Roll out each part into a rectangle 3-5 millimeters thick,
  • grease with melted butter. We turn it into an envelope. Also with the second part.

  • Put it on a floured board (plate) and put it in the refrigerator for 30 minutes.

  • Then we take out the dough and each part, without expanding !!, roll out into a rectangle 3-5 mm thick. and again grease with melted butter, leaving a couple of centimeters without lubrication from the side of the future seam. We twist into a roll, try to twist it tighter, but do not wrinkle the dough too much.

  • We spread, seam down, on a baking sheet covered with parchment or on a perforated sheet for baguettes, pre-oiled with vegetable oil. Lubricate with a mixture of yolk and two tablespoons of water, sprinkle with sesame seeds. We make incisions at 45 degrees. Cover with foil and leave at room temperature for 30 minutes.
  • Baguette Tourbillon
  • We bake in an oven preheated to 180 - 190 ° C for 20-25 minutes until browning. We take out, cool on a wire rack.
