Ingredients

Wheat flour. , in / s 4-4.5 cups
Sugar 1.5 cups
Water 0.5 cups
Butter 160 g
Soda 1 tsp,
Ground ginger, dry 1 tsp
Ground cinnamon 1 tsp
Ground cloves 0.5 tsp
Cardamom and nutmeg, ground 1 pinch
Salt and black pepper - optional pinch
For syrup, water and sugar 3 st. l.

Cooking method

  • We will prepare and measure all the ingredients in the right amount.
  • Sift the flour into a large bowl. Mix with baking soda.
  • Then let's prepare the syrup.
  • To do this, put in a cocotte maker, or a frying pan of small diameter, 3 tbsp. l. sugar and, stirring, fry in a pan until a liquid mass of dark brown color. Remove from heat and CAREFULLY pour in 3 tbsp. l. water.
  • Move until the burnt sugar is completely dissolved in water and slightly boil it down to make a syrup.
  • Now you need to take a liter saucepan, pour 0.5 cups of water into it, put 1.5 cups of sugar and syrup, heat to hot and stir until the sugar is completely dissolved.
  • Remove from heat, add spices and oil and stir everything to melt the butter. Cool the contents of the saucepan until warm and pour into a bowl of flour.
  • Knead the dough, let it cool in the refrigerator for at least 5 hours, or better all night (I prepare the dough in advance, put it in a bag and in the freezer for 7-15 days).
  • Before baking, take out the dough, let it stand for 1 hour at room temperature, so that it can be rolled into a layer 3-4 mm thick and cut out shaped cookies.
  • Each cookie can be drilled with a cocktail straw to thread colorful ribbons through after baking and hang the cookie on the Christmas tree.
  • Bake on baking paper, on a baking sheet, at a distance from each other
  • 10 minutes
  • at 160 ℃.
  • Ready-made cookies can be sprinkled with icing sugar, or decorated with icing.

The biscuits are crumbly, the taste seems to be with honey, most of all reminiscent of Danish cookies in iron boxes Danish butter cookies
There is a slight pungency from the ginger in the aftertaste.
I liked the option more after a week in the morrzil, the taste of the spices seemed to become richer and the soda was not felt at all.
When I did it after 5 hours, when baking, there was a slight smell of soda and the cookies looked more like ordinary buttery, soft, crumbly
