Ingredients

A hen 800 g - 1 kg
White wine 3 tbsp. l.
Potatoes 1 PC.
Carrot 1 PC.
Leek 1 PC.
White cabbage 100 g
Bulb onions 1 PC.
Funcheza 50 g
Dried red pepper (I have fresh) 2-5 pcs.
Sesame oil 2 tbsp. l.
Marinade
Water 400-500 ml
Soy sauce 5 tbsp. l.
Brown sugar 3 tbsp. l.
Garlic 3-5 cloves
Molasses (I've got honey) 2 tbsp. l.
White wine 2 tbsp. l.
Ginger juice 1 tbsp. l.
Finely ground red pepper 1 tbsp. l.
Ground black pepper 1/4 tsp
Ginger juice
Ginger root 50 g
Water 200 ml

Cooking method

  • This dish is very popular in Korea. Chicken pieces with vegetables and starch noodles, marinated and stewed in a marinade with soy sauce. It originally appeared in the city of Andong, therefore it is often called "Andong Chjimtak".
  • ChchimtakFirst, let's prepare the ginger juice. Peel a piece of ginger root and pour 200 ml of water
  • ChchimtakChop the ginger, place in a blender, add water and chop at high speed
  • ChchimtakStrain the ginger mass through a fine sieve or gauze. This is how ginger juice turned out. We only need 1 tbsp. l., the rest of the juice can be stored in the refrigerator and used to prepare other Korean dishes
  • ChchimtakPut a pot of water (700-800 ml) on the stove. Cut chicken into 5-7 cm pieces and remove excess fat and skin
  • ChchimtakPour wine into boiling water and lightly scald chicken in it (a few mint)
  • ChchimtakPlace the blanched chicken in a colander and rinse well in cool water
  • ChchimtakChop the garlic and mix all the ingredients for the marinade
  • ChchimtakSoak blanched chicken in marinade for 30 minutes
  • ChchimtakWhile the chicken is marinated, prepare the vegetables. Peel the potatoes and cut into 3 cm cubes. Then cut off the sharp corners by rounding the cubes and place the potatoes in cold water to remove excess starch.
  • ChchimtakCut the carrots into cubes of the same size and boil them together with the potatoes in boiling water
  • ChchimtakChop the leek coarsely. Also cut the onions and white cabbage into medium sized pieces.
  • ChchimtakSoak funcheza in warm water to swell
  • ChchimtakPour 1 tbsp into a saucepan. l. sesame oil and sauté the red peppers over medium heat. I didn't have any dried peppers, so I used fresh
  • ChchimtakAdd the marinated chicken along with the marinade to a saucepan with butter and simmer everything over high heat
  • ChchimtakAdd chopped vegetables and funcheza to the chicken and simmer over medium heat until the contents become the same color. When the potatoes are cooked, add 1 tbsp. l. sesame oil and mix thoroughly
  • ChchimtakArrange the dish on plates and invite your family for a delicious hot lunch
