Ingredients

Dough:
eggs (weight without shell) 180 g
wheat flour of the highest grade 200 g
granulated sugar 150 g
butter 100 g
milk 60 g
salt 1/8 tsp
baking powder 1 tsp
vanillin 1/2 g
Cream:
yolks 40 g (2 pcs)
granulated sugar 60 g
corn starch 10 g
milk 150 g
vanilla 1/2 g
White chocolate 40 g
Glaze:
chocolate 70-75% 70 g
butter 70 g

Cooking method

Jeanne, here cupcakes are baked only in paper tins, regardless of holiday or home. You can take low ones - they are called for cupcakes (molds). I am not trifling and take immediately for muffins - they are higher and bigger. It is not necessary to remove / tear off paper molds from the cupcake. Everyone will take and individually remove a piece of paper neatly in a circle, even children know how to do it. It's hygiene.

Even if you get the cupcake below the corrugated mold, it doesn't matter - you wind the cream on top and it will be fine.

To be honest, I have never seen silicone molds for cupcakes and muffins in use. Disposable paper only.
