Cooking method

  • I like dried vegetables very much - they will not sprout during storage, they will not rot, take up little space in comparison with those that have been demolished, they will be cheaper (after all, we dry them mainly in the season when they are not expensive), cook quickly from them, which is important for busy working housewives (available in mind that they do not need to be cleaned, washed, cut before cooking - all this has already been done before drying).
  • I cook almost everything in MV, I stopped frying in soup / borscht - I just throw a handful of dried carrots and onions into a saucepan at the beginning. Also perfect for all kinds of stews! Someone says that it is tasteless without frying, or the taste is different ... I don't know, in my opinion everything turns out to be as tasty as with traditional cooking.
  • In short, if you are interested, try to make a small portion once and decide for yourself whether it suits you or not.
  • The drying process is very easy - washed the vegetables, peeled, cut them into thin slices / plates, laid them in one row on trays in the dryer. We turned on the medium mode (only dry the greens on the minimum mode). In Isidri500, almost all of the following dries for me after 1 night - in the evening I came home from work, cut it, threw it into the dryer, left it overnight, turned it off in the morning, left it in the dryer until the evening without removing it - this will remove residual moisture from the dried products. Always (when it is turned off with dried fruits / vegetables not pulled out) I cover the hole on top with a thick gauze so that no midges-flies can get through to my dryer. And it was a sad experience when dried raspberries stood uncovered on the table and the mean food moth got to it ... What I learned only a month later, when worms started in the raspberries
  • Therefore, I decided for myself - it is better to overdo it than to miss it!
  • In short, I come home from work in the evening, take off \ "dried fruits \", put a new batch in the dryer until morning, etc., etc.
  • Store at room temperature in the kitchen on the table in tight-fitting glass / plastic jars / containers. Once it happened that I was a little underdried and my dried cherries began to get moldy, so the main rule is to dry well before storing!
  • I bought extra nets for each tier in the dryer and I always use it only with it, because it is more convenient to collect dried products from the net, regardless of their size
  • Carrot - I rub it on a Resti grater (this is a coarse grater) or across on a 3.5mm Trend Berner - this is how I get short very thin sticks like a Korean carrot, only short ones. You can rub on anything, even by hand in a combine. Only. - I do not advise on a fine grater, because during drying everything will fall down through the grate

  • Bulb onions I cut into thin half rings again on my favorite Berner on a knifeless insert for a thicker cut. If there is no berner, then in any available way. Thickness - 0.3-0.5cm. Note that there will be a pretty strong smell! But I like it; if I dry it during the day, then I put it in the bedroom specifically for the prevention of colds - like aromatherapy. If you don't like the look of the onion in the soup, then you can grind it on a coffee grinder - the taste will remain, but you won't see it! So you can deceive capricious children - like, and then there is no onion, eat it for health!

  • Tomatoes I cut it in half lengthwise, remove all the white and cut it across into plates - it turns out like half rings. Here I personally like to use the Victorinox kitchen knife with serrated teeth.I love this knife! Who does not have it yet - buy it urgently! I am all my relatives and employees at work infected prompted to buy this knife - very sharp, with teeth it is much more convenient to cut everything. At first, everyone rejected - no, I don't need it, I already have a good / favorite knife ... But we tried Victorinox and now it has become a favorite, even if they used to like knives with a straight blade or if they liked big knives more! It costs 300 rubles, article 6.7233, brand Victorinox. I cut everything for them except potatoes, it's very convenient. You will not regret!
  • What am I talking about? Oh, tomatoes! So, they cut it, put it in one layer. Since the tomatoes are juicy, it is better here first to turn on the maximum mode for 3-4 hours so that the moisture goes away quickly, and then on medium mode until it dries completely. But it is possible and only on medium mode, it will just take a little longer to dry. There are recipes for sun-dried tomatoes, but there is a completely different procedure, this recipe is for dried tomatoes! Can be used in chunks, especially for stews, or can be ground on a coffee grinder.

  • Bulgarian pepper remove the stalk with seeds. It is convenient to do this with a special thing for peeling peppers, it costs a penny. Cut in half lengthwise, then crosswise into half-rings with a thickness of half a centimeter, spread out side by side, you can layer a thicker one, because after that it will dry out a lot. You can store it by color, for example, add red pepper to a transparent broth for beauty, and add yellow or green to soup with tomato, because red pepper will not be visible in it. By the way, red bell pepper can be ground in a coffee grinder and you get a fragrant homemade paprika!

  • Garlic cut into slices (cammie plates), spread on a grid, dry until completely dry. You can add to food in pieces, or you can grind on a coffee grinder, add at the end of cooking
  • Greens different, as well as green onions - cut the onion into small pieces, cut off the leaves from the greens. Dry on a minimum setting until completely dry. The twigs can not be thrown away, but cut into 5 cm pieces, dried separately from the leaves of greenery, you can even at medium temperature, then grind in a coffee grinder.

  • All this can be dried in dryers of other brands, even if there is only 1 temperature setting, you only need to adjust the drying time. My girlfriend has some kind of inexpensive dryer, she dries in it the same thing as me, but not 10-12 hours, but a day. Although the diameter of its dryer is smaller and therefore the load in kg is also smaller.
  • Try, experiment, good results for you!

Beets can also be dried, cut into Korean carrots, then added to borscht, it gave a very rich red color.

I was looking for a general search. But it's hard to fish out there. The volume is large and the word is common.
