Poultry liver pudding (Panasonic multicooker)

Category: Meat dishes

Ingredients

Chicken liver 500 g
Eggs 2 pcs.
Cream 1 tbsp.
Bread crumb 100 g
Butter 100 g

Cooking method

  • Everything through a meat grinder (probably in the combine it would have turned out more tender, but I still have it on the mezzanine)
  • and in a multi in baking mode - 1 hour

Note

Admin, I made a liver yesterday .. according to your recipe I was afraid \ you have liver and sour cream in half .. and I have a whole 1 kg of it (liver), in general, I made it differently.

The result is something very reminiscent of Danish baked pâté in trays.

taste - good everyone liked it very much
well, that's like this pate, only softer and more saturated.

Poultry liver pudding - Answer to Celestine

150 gr. poultry liver, 1 clove of garlic, 2 eggs, 2 egg yolks, 1/4 bunch of parsley, 175 gr. sour cream, salt and pepper to taste.

Chop the garlic. Grind poultry liver and garlic in a food processor until smooth, add eggs, sour cream, finely chopped parsley, salt, pepper.
I add flour to it all so that it turns out like a thick pancake dough (I only take a pound of liver and milk instead of sour cream) and fry like thick yeast pancakes on both sides in a skillet under the lid. About three cakes. Finely chop onions and carrots in a food processor, fry them in creamy margarine. I add mayonnaise to the resulting mixture and coat the finished fried liver cakes with this. the top layer - I also spread and sprinkle with herbs. It turns out a luxurious liver cake.

I agree that it is delicious! And we get a real liver pate. Next time I'll do it in cartoon. If done in a multitool or oven, then you can add something to the mixture, I added fresh pears in small pieces, or chopped fried mushrooms.
Fantasies just above the roof!

Celestine There is a proposal to bake the pudding in a cartoon, in the mode like a curd cake, the consistency is the same, it should work out.
Done, the recipe was slightly supplemented:
550gr. bird liver
500gr. sour cream
4 eggs
3 tbsp. l. starch
Salt, pepper, garlic - to taste
I whipped everything in a food processor, it turned out pretty liquid, poured it into a multicooker, put it on for 60 minutes and waited.
Here's what happened:
Poultry liver pudding (Panasonic multicooker)

And if you decorate it - a festive dish, and beautiful, and fast, and tasty, and a lot
And I also thought, if you add mushrooms to minced meat?

I recommend with sour cream or ... whoever likes it
The child said: Yum-yum, what a cake

Celestine, you did it anyway !!!
I made liver pudding with pieces of hard pears. I liked it, though I baked it in the oven.

It's interesting with a pear, I can't even imagine the taste, I thought more about mushrooms with onions .. I need to try with a pear ... interesting.
So experience has shown that in a multicooker it is very possible!
I added some grit just in case, maybe it wasn't necessary, but it was too liquid. If you do, write down what ingredients you used.
fugaska
and we make a liver with an apple and onion - very tasty !!!

Celestine, and what mode?

Baking for 60 minutes, I open it almost immediately, I just need to let it cool a little, because the tender is very hot. if the liver is done with hearts, then the blotches will be hard, cool
Zest
yes, yes, yes)) This is exactly what I expected to get)) Thank you)) And without unnecessary stomping near the stove with baking cakes. Well, here - there are no limits for imagination. If you want, add mushroom hearts, if you want, cut into cakes and smear them. The day after tomorrow the little one returns after the holidays, I will definitely do it tomorrow)

I even find it difficult to imagine the taste of such a pudding. How is he going? like as instead of bread to soup? or just a separate "second"? or for tea?
Zest
Taste - the most delicate liver)) For tea - hardly. When I make a liver cake, it goes as an independent dish with salad vegetables.

It's good with potatoes, and just separately with sour cream or mayonnaise (but I don't really respect him)

Tell me what you can add to get rid of the bitterness? I do it for my daughter (1g8months), so she is so fussy ...
I did it without any additives. What does an apple give?

A good bitterness is given by turkey liver, chicken liver is somewhat more tender. Even before whipping it, I fill it with boiling water, I don't know if this removes the bitterness, but I can't hear it in the pudding ... my son did not notice

Keep in water for a long time? Are you adding an apple?

Not long in water, flooded, after min. poured well, I did not try to add an apple, it did not happen at my place during the preparation of the liver

Poured boiling water. I will try to add an apple I think it will be softer

Straight and I don't know ... maybe the liver should be a little bitter .. I added a finely chopped apple, so I'm still bitter. My daughter, however, ate it! Interestingly, no one tried any other meat?

Rezlina, Pork liver usually gives bitterness. The liver of a bird can only taste bitter if the gallbladder bursts and touches the liver. Pork liver must be soaked before cooking in cold, running water for 2-3 hours or in milk. With the liver of a bird, I think you can do the same.

In boiling water, the liver can be brewed.Remember why blood stains cannot be washed off even with warm water, only with cold water. The same is with the liver, since the liver is a hematopoietic organ.
For poultry liver, probably, 1 hour of soaking is enough, because the pieces are small there.

An amazing taste of the liver is obtained if it is soaked in milk for 2 hours, and it becomes soft as if it was beaten off. Pre-cut into large plates and peel off the film.

Does this recipe contain milk? Sour cream is indicated here, and replace with it
SvetKa
Oh. it meant dairy products in general. do not eat meat with dairy from me, so I'm looking for alternative replacement options - can coconut milk replace it?
cheerful
with coke milk you should get a very interesting taste. You can add a little hot pepper and fresh grated ginger
kleskox35
Sour cream can be replaced with the same amount of onion in terms of volume, only it must be spassed beforehand, or at least doused with boiling water. In general, I wanted to share, my aunt is vegetarian, she doesn't eat meat, so for her we replaced the liver with salmon fillet, well, it turned out very tasty. And if you also pour the caviar sauce, then you can serve as a delicacy to any table
cheerful
the fish fillet idea is great. (y) Liver tenderness is preserved and tasty
