Cooking method

  • American Apple Pie is a classic of the genre! Well, very famous baked goods of the Northern Continent! A thick layer of apple filling in a crispy and crumbly dough. Delicate apple in every bite - great pleasure in every serving!
  • It's worth trying .. It's worth repeating ...
  • There is another unusual thing about the proposed apple pie - apple cider. Oh, how it sounds here ..
  • So let's go:
  • Apple filling
  • 1American Apple PieWe clean apples from the skin and core.
  • 2American Apple PieCut into slices 1/2 cm thick. Sprinkle with lemon juice so that the apples do not darken.
  • 3American Apple PieIn a separate container, mix the sugar, vanilla, cinnamon. nutmeg and a pinch of salt.
  • 4American Apple PieWe mix our apples with the sugar-spicy mixture and let stand for 30 minutes to 3 hours to separate the juice.
  • 5American Apple PieAfter the apples have given off the juice, discard them in a colander.
  • 6American Apple PiePut all the juice with sugar on high heat. Add butter and bring to a boil. We boil liquid in 2 p. The mixture will thicken and take on a caramel color. Do not interfere with cooking! You can rotate the saucepan slightly.
  • 7American Apple PieWe mix cornstarch (for apples) with our apples so that no traces of starch are noticeable.
  • 8American Apple PiePour the thickened mixture into the apples and mix until smooth.
  • 9American Apple PieIn a saucepan, dissolve the starch (for cider) and cider. Bring to a boil and cook until thickened. Mix with apples.
  • 10American Apple PieAt this stage, the filling is ready.
  • Dough preparation
  • 11American Apple PiePour flour, salt and baking powder into the bowl of the food processor. We launch literally one click to mix the ingredients. Add very chilled cottage cheese to the flour. We start the processor until a large crumb is formed.
  • 12American Apple PieAdd very cold diced butter to the bowl
  • 13American Apple PieWe turn on our food processor in ripple mode for about 5-7 clicks. Then, with the engine running, pour the cream mixed with vinegar into the bowl. Just another 5-10 seconds and you're done! Please note that it has not gathered into a ball, but has a crumb structure, but small and is already molded.
  • 14American Apple PieWe collect the dough in a lump, flatten it into a cake with a diameter of 12-15 cm, wrap it in foil and put it in the refrigerator for at least 3 hours, or better overnight.
  • Assembling the cake
  • 15American Apple PieDivide the dough in half. We try to work quickly so that the dough does not heat up.
  • 16American Apple PieFor the bottom layer: Roll out one half of the dough to such a size that the dough completely covers the bottom and sides of the split form. Dough thickness - 3 mm. We transfer the dough to the mold and press it against the sides. We try not to break the dough.
  • 17American Apple PiePut the apple filling on the bottom and distribute it evenly.
  • 18American Apple PieRoll out the second half of the dough to the size of the mold diameter. Cover the filling.
  • 19American Apple PieCut off the edges carefully. With a fork around the perimeter, we press the dough together and to the sides. Make 5 cuts along the top layer. We send the cake to the refrigerator for 1 hour.
  • 20American Apple PieWe bake at 220C for the first 20 minutes, then lower the temperature to 20C and bake for another 20 minutes. The filling should be soft, but not fall apart.
  • 21American Apple PieCool down in shape. Remove the cooled cake from the mold. Cut into portions
  • Well, some 21 steps and a happy family sweeps out an American pie! )))

You can safely skip the step with cider then)
Masha Ivanova
Olya! Or maybe something else to shed alcohol?

Still, 120 ml is a lot!

What can be replaced?
Dessert white wine.

And steps 2 through 9 can be reduced to two or three. But then the master class will not be so beautiful.

Prime Minister, Olga, thank you very much!

To avoid buying wine specifically, you can take apple juice and pour a spoonful or two of cognac or rum into it.
Masha Ivanova
Premier, Olga! This option suits me best. There is cognac.

And shampoo, too, might it work too?
Premier
It depends on what you like best ... cognac or champagne ?!
Masha Ivanova
All good. Tomorrow or the day after tomorrow I will do it and unsubscribe.

To be honest, champagne is not worth it. I experimented with it several times. Let's just say, unusual, and pronounced. Well, maybe I’m lila without hesitation

Olya, Premier, thank you for the good wine recommendation!

To be honest, I have never tasted anything with champagne, since I don't have it. But she naively believed that when the gas was exhausted, it was no different in cooking from ordinary wine. So what's wrong?

Ol, I think it's a delicious pie. Doesn't get wet or doesn't have time?

Angela, I'll put it this way. At the end of the second day, the bottom was soft but not flowing. The perimeter and edges were firm, but no longer flaking.
But, to be honest, the pie itself is small, so for a family it is for one tea party. )))

Olya, maybe I was just experimenting with sweet champagne))) But, you know, the taste is "a foreign aroma is very strongly felt"

Today I cooked it for my birthday. Everything worked out. Thanks for the recipe. I did not peel the peel.
