Vienna apple strudel

Ingredients:

Dough:
Flour 200 g
Salt pinch
Warm water 75 ml
Vegetable oil 4 dimensional table. spoons

Cooking method

  • Knead a tough but pliable dough. I kneaded in the combine with a hook and added 1 measuring table in the process of kneading. a spoonful of water.

  • Put the dough in a warm place for 30 minutes. I took the mixer out of the HP, put the dough there, covered it with a towel and turned on the "heating" (temperature equalization).

  • filling

  • 1-1.5 kg apples (I had 1.1)

  • 0.5 tiny bottle of rum flavor

  • 3 drops of lemon flavor (I just drizzled apples with lime juice)

  • 50 g semolina

  • 100 grams of raisins

  • sugar to taste

  • 2 bags of vanilla sugar

  • for dough lubrication

  • 75 g melted butter

  • Peel the apples, cut into 4 pieces, core them, cut into thin strips. Place in a bowl, mix with rum essence and lightly sprinkle with lemon juice, stir.

  • Divide the dough into two parts. Roll each part thinly until transparent (!), You can even stretch it with your hands into a rectangle about 40x30 cm in size.

  • Grease the dough with melted butter. Sprinkle generously with semolina. Spread half the apples in an even layer, leaving 3 cm free on all sides. Sprinkle apples with sugar to taste, vanilla sugar, sprinkle with raisins, sprinkle with semolina again. Wrap the edges of the dough on three sides over the apples. Roll the strudel along the long side, place seam side down on a baking sheet lined with baking paper, brush with melted butter and bake in the oven for about 50 minutes.

  • Top-bottom 180 °, preheat oven.

  • Convection mode 160 °, WITHOUT preheating.

  • After 30 minutes, grease the strudels with butter and return to the oven.

  • I overdid it with rolling the dough and the strudels turned out to be so healthy that I barely shoved them onto the baking sheet. So make sure the strudel is not longer than your baking sheet.

  • Serve the strudel warm with Vienna apple strudel

  • Since my German husband considers himself an expert on strudel, I can be proud of myself - my husband said that it was HE!

But you can sprinkle the apples with sugar to taste. Since you have a sweet tooth, you can use up to 100 grams of sugar on the sprinkle.

Well, you can add a spoon to the sugar sauce.

It will also be delicious without flavors. Apples give flavor + vanilla sugar.

I was kneading the dough in a food processor. Can be kneaded with a mixer - dough attachments. If your HP can knead such a small amount of dough, of course, you can knead in the HP.

Yesterday I made strudel stuffed with dried apples. It also turned out very tasty. Drying poured boiling water overnight. I poured the infusion and boiled the compote on it, and squeezed the apples, passed it through a meat grinder, added sugar, lemon juice and a couple of tablespoons of brandy to taste. It turned out to be a light savory filling. Can be mixed with ground nuts.

In the other two - cinnamon (husband loves). All the options are very tasty, juicy (although only 1 kg of apples went for all 3 pieces).
