  • And I'll tell you about the marshmallow. Not about the famous Belevskaya, but somewhat different. But from this “otherness” of its own, it is not at all ..., it is just that it is different.
  • And old technologies, which we will also touch on in a new way.
  • Here they are - apples, only from a tree and marshmallow, the one that is "different."

  • Of course, in order to cook the marshmallow, you must, first, pick the apples from the tree, bring them home and wash, of course. Although they were from their garden and were not treated with anything chemical, but still. In general, wash it without fail.

  • Apples, for a start, you need to cut and clean all the centers and seeds. There are a lot of ways. You can just use a knife, or you can use this simple, but very convenient way to do it, as they say now. The process is very convenient and fast.
  • I will note about the proportions. We took four and a half kilograms of apples. Already in pure and crushed form.
  • Load the apples into a suitable container and ... you need only a glass of one and a half. It would be more correct to pour water on the bottom of the pan, and only then put the apples in it.

  • And then we put the pan on the stove, on a small light. And keep it, the pan on the stove, steam the apples. We must wait until they soften.

  • And you can go another way. Cut only the core, or chop and bake as well. It is best, of course, to do this in the Russian stove, but ... you can do without an oven.
  • The goal is the same - to soften Antonovka until it completely relaxes and loses its elasticity.

  • And then, if you quickly do it, then with a blender, for example, grind baked or steamed apples into a homogeneous mass.

  • If you rub the apples through a sieve, then the mass will turn out, of course, more tender and ... well, probably, pure. In terms of the uniformity of the finished product.

  • For those four and a half kilograms of apples, you need to add nine hundred grams (and what can you do, if the package now weighs just that much) sugar.
  • Very well. Carefully! Knead the mass and put the pan on the stove again, on a small light. The mass must be constantly mixed. Delicately so. As soon as it starts bubbling, continue to gently stir for another five to ten minutes.

  • In the meantime, it cools down, let's talk about these old technologies, which are in a new way. It would be more correct to continue the process again in the Russian stove. But, honestly, to drown laziness. Therefore, we used this device here. It's called a "dehydrator" !!! But they think that they have invented something very new, but the essence has not changed. Ascending currents of dry warm air, as in a “free-standing oven”.

  • It is very convenient to roll the finished marshmallow layers into tubes. Before serving, cut this tube, for example, into rings. And in order to brighten up the sour taste of Antonovka for someone from the sweet tooth, put powdered sugar next to it - let it be.
