Cooking method

  • 1Smoked candied plumsWe take dense plums, preferably slightly unripe. The bones should be well separated. I have a plum sort "ugorka", we call it that. And if it is correct, then this is "Hungarian" (Hungary in Ukrainian is Ugorshchina). We cut along. We need this so that the edges are as even as possible, only for aesthetic reasons.
  • 2Smoked candied plumsHook the bone.
  • 3Smoked candied plumsWe take out the bone, trying not to separate the halves in half and, when folded, form a plum.
  • 4Smoked candied plumsWe put the prepared plums in a bowl.
  • 5Smoked candied plumsPour sugar into a saucepan and fill it with water. We put it on the stove.
  • 6Smoked candied plumsCook, stirring occasionally, until sugar dissolves. Bring to a boil.
  • 7Smoked candied plumsFill the plums and leave to cool completely. After the first pour, I leave it on for 10-12 hours.
  • 8Smoked candied plumsPlums release a lot of their juice. This is what we need.
  • 9Smoked candied plumsPlace the plums in a colander with a slotted spoon. Bring the syrup to a boil and pour over the plums again. It is important that the syrup does not boil, but begins to boil. Leave to cool completely.
  • 10Smoked candied plumsWe repeat the procedure 7-8 times. I filled in 8 times. We fill it for so long so that the sugar syrup completely replaces the plum juice. In the photo, plums are flooded for the fourth time.
  • 11Smoked candied plumsWhen the plums have cooled down after the last pouring, transfer them to a colander and drain all the syrup. I leave it overnight.
  • 12Smoked candied plumsBoil the syrup, pour it into sterile jars and roll it up. The syrup turns out to be thick, sweet and sour. It can be used to soak cakes, served with ice cream, pancakes and pancakes. And just add to tea.
  • 13Smoked candied plumsWe put plums in the trays of the dryer. I dried in the Ezidri electric dryer at full power for 16 hours.

  • 21Smoked candied plumsCover with a lid and place on the stove. The fire is big. After 10 minutes, turn off and leave under the lid for 15-20 minutes.
  • 22Smoked candied plumsOpen it, take out the stand and remove the plums. Let it cool, wrap it in paper and put it in a container with a lid or a bag. Store in the refrigerator or freezer.

What to say? Both types of plums are tasty. Smoked in the house. The hood was switched on to the first position and a window was opened. There was a slightly perceptible smell of haze, not even haze, but the smell of wood, like in a sauna. But plums smell magical! And this is a slightly perceptible smoked smell. Recommend!

Small, slightly watery, but - their own! Everything worked out! Of course, they lost their shape. Of course, it took longer and more difficult to remove the bone. Of course, almost everyone turned into mush after the eighth pouring ... But! She formed it like soft plasticine, into a kind of plum, put it in the dryer - everything worked out! After 16 hours of drying, turned over and dried for another 3 hours. Keep in shape! Delicious and aromatic (purchased ones do not give such a flavor). The syrup went great with homemade yogurt. Yes, I removed the foam during cooking. Angela does not write about her, most likely she was not there. I have plums of a different quality. Thank you Angela! Good luck in the competition!

Jeannehow great it all worked out! My plums, which are harder, kept their shape well, and the soft ones also fell apart, but you write correctly that you put them in a kind of plum and after drying you can not tell whether they were whole or harvested. And that delicious, no doubt.
