  • And that's not the point at all. This villager was prepared based on recipes that were taken from old cookbooks. Each of them has something of its own, but the general principle of the fishery can be traced in all. The difference is in the little things. For example, in the fish species that are used. And since there is no such abundance in the bins today, then, forgive me, in the absence of a stamp, we will write in ordinary, so to speak.
  • And ... if we are talking about soup, then in the sources, most often, it is called “Selyanka”. If "salty", then this is stewed cabbage with something ... different.
  • For the broth, we got all the fish that remained from the previous preparations from the glacier. Heads, tails and other fins with ridges.
  • When the broth begins to boil, foam appears. Where from? And from the pan.
  • I always take it off, although opinions differ.

  • As soon as this very foam has ceased to stand out, then it is worth sending such a simple set to the pan. A couple of onions, a couple of carrots, laurel leaves, peas, white roots, and a couple of star anise stars.
  • I always reduce the fire to the extremely minimum, that is, from this moment the future broth does not boil, but languishes. Slightly gurgling sometimes, however.

  • This should last at least two hours. Long? But it's worth it.
