Grape jam with balsamic "Black raisins"

Ingredients

Black raisin grapes 1 kg. ready-made puree
White sugar 500 grams (less to taste)
Balsamic vinegar 1.5-2 tbsp. l.

Cooking method

  • Sort the raisins from the branches and spoiled berries, rinse in clean water.
  • Cut the berries in half with a knife or break into large crumbs with a blender. You will get a lot of juice!
  • Put the berries in a saucepan and boil so that the grape skins become softer and can be rubbed through a sieve. Add about 50-100 grams of sugar to the boil.
  • Boil the berries for about 15-20 minutes.
  • Transfer the berries to a sieve, I rub the berries through the attachment to the Kenwood combine, a wiping sieve.
  • Rub the berries, weigh the finished puree, and transfer back to the saucepan.
  • Add sugar, balsamic vinegar to the mass, and boil for about 20-30 minutes, until the mass thickens. Add sugar to taste, raisins are very sweet on their own.
  • You can add regular apple cider vinegar, or the juice of one lemon.
  • Transfer the ready jam to jars hot, directly from the saucepan, close the lids, put on the lids until they cool completely.
  • You can store this jam in the pantry or in the closet.

The dish is designed for

about 2 jars of 300 ml.

Note

This jam takes time to mature! It will stand longer, get the best taste, including due to balsamic.

Almost all the bones floated up and I fished them out with a spoon. When cooking, I added cinnamon and a little lemon at the end. It turned out to be awesome confiture! This is from dark grapes, I don't know the variety.
I decided to repeat it from another variety, it will sing with us at the end of September. The number did not work. Neither sight nor taste ... although I did the same
