Fried flakes

Ingredients

Mushrooms Scale how much did they collect
Unsalted lard or any fat on demand
Salt taste
Onion decently.

Cooking method

  • So, you came across interesting, in appearance, mushrooms and you learned that they are edible. What to do with them? What, what ... to cook.
  • To begin with, we soak the mushrooms in a sufficient volume of water to wash off the excess from them. In this case, the scales on the legs soften and are easily removed with your fingers.
  • Then we cut the large mushrooms as you wish.
  • Fried flakes
  • All hats are definitely used, but with legs, in our family, opinions are divided. Someone's large legs are harsh, but I, personally, like their elasticity.
  • After water and shredding procedures, the mushrooms are boiled. I've been doing it for a couple of days. Usually 10 minutes, but 15 flakes.
  • Set aside for cooking and, if there are a lot of mushrooms, part of it in freeze.
  • Fried flakes
  • Now I fry the bacon until golden brown (you can take any fat you like, it tastes better for me with lard) in a pan and add the mushrooms. They are fried pretty quickly, 5 minutes before cooking, I add onions. Only on top, without stirring. And then, after 5 minutes, I mix, turn off the pan and let it stand under the lid for about five minutes.
  • In this case, the onion retains its color, remains slightly crispy and, at the same time, not soggy.

Tatyana, very interesting. Thank you! I have never heard of such a method of frying onions. I will definitely try.
I have never heard of such mushrooms either. Probably, we don't have them ... Although, perhaps, they are called somehow differently? It is interesting to look at them in their original form.

In general, I added a photo of our mushrooms. We have golden flakes or royal honey. In general, look on the net about them. On the territory of Russia, they write, there are 30 species. They are equated to mushrooms.

Giraffe, wow! I have never eaten these mushrooms. In my Soviet reference book it is written about them that they ... well, in short, apparently then there were other views on them. Yours looks delicious!
About lard, and onions in your interpretation - I wrote it down, I remembered it, very cool! About scales ... I'll think about it.
In any case, thank you so much for the recipe, for introducing me to such an interesting culinary experience.

I often met them in the Istra region, but NEVER even thought that they could end up in a frying pan
Thanks for the info and for an interesting recipe

Jeanne, on this trip there were a lot of rows. Magnificent ... But I clearly remembered that at work with my husband, in the fall, they made an organized outing after them for salting. And we do not have salted mushrooms in such quantities. So I decided to let those who need them rejoice. We didn't cut a single one. And at home I read that they are good in any form. Well, henceforth we will be smarter.

And that is also an option. Serve like a mystery dish. By the way, we have a toss-up cat, Roach is called. The children were so humorous. I was for Cod.

these delicious mushrooms
We always knew these mushrooms like honey mushrooms. I have never heard such a cool name for them - flakes. I have been making caviar from honey agarics for a long time, more than thirty years.

I didn't hear either, until the mushrooms caught my eye and began to find out what they found. In general, I told my husband that we need to improve our mushroom literacy.
