Cooking method

  • Whoopi is the most famous American cookie. American classics. Special baking sheets and forms are made for it; many options for baking whoopi can be found in cookbooks and on the Internet.
  • And I will offer you to bake the famous American Whoopi from the famous American “queen of desserts” Maida Hitter. Oh yes, she always offers the best! Anyone who is not familiar with her, I strongly recommend that you get to know her. Those who have heard of it, I think, will not pass by this recipe.
  • So what are these wopikas? Whoopi are two soft delicate intense chocolate cookies, joined together by the most delicate and sweet vanilla filling.
  • Well, let's get down to making and baking cookies:
  • 1. Beat butter at room temperature with sugar and vanilla until smooth and light.
  • 2. Add eggs one at a time, mixing thoroughly until smooth.
  • 3. Sift flour, salt, soda, baking powder and citric acid.
  • 4. At a slow speed, add cocoa to the mixer bowl, then add the dry ingredients in 3 doses, alternating with milk in 2 doses. We do not knead for a long time. Only until smooth (if at the stage of milk introduction the mixture went flakes - do not be alarmed, this is normal)
  • 5. Put cookies on a baking sheet lined with parchment. In the original, you need to plant cookies with a diameter of about 7-8 cm (they are large). I use a form for this. Leave some space between the cookies, they will increase in size. Also try to make them the same as possible, it will be very useful for us when gluing.

  • 6. Bake in an oven preheated to 190C for about 20 minutes until tender. Cookies are ready if they return very well and quickly by pressing lightly with the ball of the finger in the center. (It took me about 15 minutes for little whoopies)
  • 7. Take them out of the oven, wait 2 minutes and remove the cookies from the baking sheet. We transfer to the wire rack until it cools completely.

  • Moving on to the filling:
  • 1. Pour flour into a saucepan. While stirring, add milk. We bring to homogeneity. If the mixture is not homogeneous, strain it. We put the pan on fire. Bring to a boil, and stirring, boil for about 2 minutes. Add 1 tbsp. l. Oils, stir and cool.
  • 2. In a mixer, beat the remaining butter at room temperature with powdered sugar and vanilla until light and smooth. Gradually, one spoonful at a time, add the cooled milk-flour mixture. Again we achieve homogeneity. Everything, the filling is ready.

  • And finally, the assembly: put a generous spoonful of filling on one half of the cookie and press on top with the second cookie.
  • Done!

  • P.S. Maida recommend making huge whoopis. Fill ¼ cups straight with dough and pour onto a baking sheet. There are 5 such cookies on a baking sheet. But as for me, this is too large.
  • The second adjustment I allowed myself was the filling. I reduced it by half. Although in fact, half of what I indicated in the recipe is enough for one serving of cookies. Despite the fact that I'm not greedy.

Very tempting cookie, thanks for taking it in!

I was intrigued by the large amount of baking soda and baking powder: for 190 grams of flour, one and a half tablespoons. Do you really need so much and do not feel it afterwards?

moleka, in general, no foreign taste. And the taste is very chocolate, because there is still a lot of cocoa.
