Chokeberry candied fruits

Candied chokeberry

Ingredients

black chokeberry 1 kg.
sugar 1 kg.
water 1 tbsp.
lemon acid 1 tsp
vanillin 1/4 tsp

Cooking method

  • Rowan blackberry contains organic acids, vitamins C, B, K, B1, B2, P, PP, carotene, trace elements - zinc, nickel, iron, copper, fluorine, iodine, magnesium, manganese. Berries dissolve vascular plaques in atherosclerosis, treat gastritis with low acidity, rheumatism, kidney and bladder stones, they are able to stimulate the liver, increase the immune system, reduce blood cholesterol, reduce the viscosity of thick blood, strengthen vascular walls, improve kidney function, are a choleretic agent. Aronia is rich in iodine, which has a beneficial effect on the weakening of the thyroid gland with reduced function. In folk medicine, berry juice is prescribed for hypertension, bringing blood pressure back to normal, as a prophylactic and therapeutic drug is useful for radiation sickness. It is recommended to drink water decoction of the fruit to separate mucus from the bladder and as a laxative, as well as to improve appetite.
  • Chokeberry berries should not be consumed by persons suffering from gastritis with high acidity, with hypotension, thrombophlebitis, stomach ulcers (information from various sources).
  • So, despite the fact that I am hypotonic, I harvest candied fruits from this wonderful berry.
  • Aronia needs to be washed and soaked in cold water for a day. Change the water every 8 hours.
  • From sugar and water, adding vanillin, boil the syrup (let it boil for about 10 minutes).
  • Then dip the berries in the syrup and cook for 20 minutes, add citric acid and turn off the heat. Let the berries cool in the syrup, then put them in a colander and leave to drain (I leave it overnight). In the morning I sprinkle the berries in one layer on the trays of the dryer and dry at the maximum temperature until the stickiness disappears. Can be dried at the lowest temperature in the oven for about 2 hours, sprinkled in one layer on a baking sheet lined with baking paper.
  • Candied fruits are perfectly stored in glass jars, sprinkled with sugar (powdered sugar). If you have low blood pressure - do not overuse! 10-15 berries instantly relieve pressure even more.
  • Candied chokeberry
  • Bon Appetit!

The dish is designed for

600 gr. jar

Time for preparing:

2 days

Cooking program:

dryer, oven

Note

After cooking candied fruits, an amazingly tasty thick syrup remains, it can be used for re-cooking candied fruits, diluted with water and drunk like a fruit drink, you can pour them on pancakes and casseroles, or you can make a delicious liqueur

Tina, THANK YOU!
V-tina
Tanyush, thank you so unexpectedly tasty (I never ate a raw berry because of its viscosity) that I carry these berries all the time, despite the chronically low blood pressure, I didn’t let my husband try it, he sweeps away everything like that, so I found it yesterday. mothers ", and in response - do more, while there is something. By the way, the syrup remains very, very tasty, now I will add about it

Oh, what a wonderful recipe - just today they talked that again we will have black chops for the birds). Well, it just doesn't work to dispose of it so that it can be eaten, and there is a lot of wine since last year.
I will definitely do it).
By the way, I never dry all candied fruits at once, for they will devour them, demons, at least as much as you can. And in the same syrup, I roll them boiling under tin lids, where they are perfectly stored until they are needed - then I take them out on a sieve and then dry. There are still pears since last year). True, when you are lazy, you can eat them like jam).

For your prescription)
For many years I have been doing this with candied fruits, it is very convenient, especially if it is hot and can only be dried at home. And then I rolled it up and wait until the cold weather)
Andreevna
V-tina,
Tinochka, how are you on time with the recipe, No further than tonight, I admired the harvest and blackberries. They are so big this year! They are not yet ripe to the end, but I bite them a little, I just have hypertension. Now I know exactly where else to apply them. Thank you dear
Rada-dms
I tasted something here last year! And your candied fruits are a real creative! I will definitely do it! And instead of raisins, you can, I somehow stopped loving him at all!
V-tina
Andreevna, Alexandra, try it - in case of hypertension - the very thing, I'm preparing for my mother, otherwise she is also a coffee lover

And I need to. Hypertensive husband is terrible. Tomorrow I'll run into the garden to pick a berry.
LanaG
Tina, thanks for the recipe. There are a lot of blackberries and I like the taste, and I also read a lot about usefulness, only ... I'm hypotonic (
BUT, I will try to do it anyway, not to waste the good.
I usually only use it in compotes and pies
V-tina
iris. ka, Irina, I don't know if it affects everyone so strongly, but my pressure really drops from 10-15 berries. Before use 110/70, after, after 30 minutes - 90/60. Tested more than once and on candied fruits

Svetlana, I'll be glad if you like it, but eat with care

LanaG, I am also hypotonic. When she began to read from what the mountain ash was used, she clapped her hands straight. I read it to the pressure, uuuu. And as a child, she ate it in handfuls. Up to the blue tongue and lips, and so that the throat is already tickling. Vkusnaa !!!

Irina, I have the same nonsense .. it seems to be necessary, but it is impossible
MariV
Bookmarked it! There are a lot of aronia this year! just time to find it ...
Farida
V-tina, and can you make from frozen berries? Last year I froze a lot, but somehow it didn't work for me. And to throw away the hand does not rise and I don't know where to put it. Bookmark the recipe.
V-tina

Olga, here most of the time is to "cut off", and then without any special difficulties everything

Farida, I would try immediately dipping frozen berries into the syrup, dividing the recipe in half to see how and what
MariV
V-tina, ehha, now I just bring my head to the pillow ...

So, a rowan narwhal. And roll up in jars or under nylon lids?

And yet, I will dry in the oven. What kind of berry should you get at the end? Dry, wrinkled, or what?
V-tina
Olga, I see

And roll up into cans or under nylon lids?
I have sprinkled with powder under a nylon lid
Quote: iris. ka

it will be a little wrinkled and when you touch it with your hands, your hands do not smear, this is so in the dryer. And in the oven it is recommended to dry for two hours, then cool and check for stickiness, if necessary, dry it. I myself did not dry it in the oven, this is what I dug up from books
Crochet
Eh), the recipe is good, but with chokeberry in the string, a couple of years ago my mother did not cry how much "raisins" from blackberry "...my sweet, do not want to gulp ...

NataliARH
Tina, just a HUGE THANKS for the recipe! So I came from the dacha and was thinking of making wine from a blackberry, or what ?! And here are your wonderful candied berries! This will be a gift to my dad as a natural cure for high blood pressure Now I will definitely cut it all off, otherwise doubts crept in ... but is she needed in such an amount
Farida
V-tina, thanks, I'll try, maybe I'll save my supplies.
In winter, I just laid it out on a tray little by little in one layer, it dried up quickly, this one was still dragged. And here with candied fruits, it should be tasty.
V-tina
Crochet, Innochka, but we are not sweet, maybe just right, because of citric acid

I also prepared for my mother, and my husband screams - I'll eat it myself, put another portion and then I plan to use liqueur or liquor on syrup, and I just want to cook a portion for testing with jam

yeah, I looked, the recipes are probably similar, this is a matter of taste, however, raisins do not remind me at all

V-tina,
Teen, take the report
Candied chokeberry
For my dryer, Dachnik-4 is a cat crying. You can do it for three kg at once. So I’ll get down to it. And I wonder if you can use the syrup from the first batch for the next bookmark, or will everything stick together?
V-tina
Alexandra, I have a kilogram fit on two pallets, on the rest of the apples dried.

you can, easily, use without a doubt
toffee
V-tina, I did yesterday too. I dried it in the oven for 6 hours. Two hours later I checked it, my hand is stained and sticky. Then I left home for a short while, but it worked for a long time. She came in, checked, she doesn't rub her hand, but it sticks very much. Syrup, girls, that's something! Yesterday we poured ice cream like syrup, oh delicious !! The berry is also delicious. There is no trace of astringency. Yum-yum just. The current would not be spoiled.
V-tina

Irina, I noticed that once at a time there seems to be no need for berries from one bush, but I dried different batches at different times
Quote: iris. ka
Syrup, girls, that's something!
yes, we also really like it, even unexpectedly from such a seemingly not very edible berry

Ira, this thought has already slipped through my mind - put it in the freezer in a hermetically sealed container ... I don't want to dry the berry completely, this will already be a raisin
Elya_lug
V-tina, Tina, specially bought a blackberry, I will do it. And what does soaking for a day give?
V-tina
Elya, to be honest - I don’t know for sure, I do as prompted, but I believe that in this way we remove the excess astringency-bitterness, because in the finished candied fruits it is practically not felt
Elya_lug
Tina, thanks, I'll go soak.
NataliARH
Tina, I have a 7-liter bucket of black chops from a bush (I haven't cut the second one yet), I've already soaked it, but I'm thinking ...there are 5-6kg of berries, should I take 5-6 sugar? don't you remember by chance .... there was still room in the syrup after the berries were lowered? that is, more than 1kg of berries will fit there?

V-tina
NataliARH, I remember exactly, almost a liter of syrup remains from one batch of berries. That is, you lower one kg, then after a while the second. I decided for myself - if you don't need liqueur, then take 1 kg of sugar for 2 kg of berries. Just soaked the party too
NataliARH
Quote: V-tina

but I want to cook all 5-6 kg at once and dry in the dryer ... I wonder the remaining syrup has less sweetness than the original one ... cook chtoli in two batches
...
V-tina
Quote: NataliARH
interestingly, the remaining syrup has less sweetness than the original one ..
less, there is an idea then to do part, then add some sugar and the second part of the berries there
NataliARH
Quote: V-tina
if you don't need liquor
and what a licker? I missed something)))) although I don't drink, I cook wine-liqueurs for my family)
V-tina
NataliARH, the syrup after the berries is so viscous and tasty, I make a light liquor from it - I just add vodka to taste and insist for a week in a dark place. In general, this syrup is so delicious, there is almost no viscosity, pouring ice cream or pancakes is super easy
Elya_lug
The blackberry is already drying up, I poured the syrup into small bottles and hid it in the cellar, I will give it out one by one. V-tina, thanks again.
toffee
Hmmm, will the pressure also decrease from such a liquor?
V-tina
Elya, I stood candied fruits in jars under parchment, they dried out a little more - by the ears of those who want not to drag them off, I hope - and you will like it

Added on Tuesday 30 Aug 2016 5:58 PM

Irinaoddly enough - my vodka does not go down, apparently, it raises
I most often get it like this: syrup: condensed milk: boiled water: vodka 1: 1: 1: 1, that is, there is not much syrup and vodka, in principle, but tasty and beautiful - lilac liqueur
toffee
In the sense of condensed milk? Which one does the store sell?
V-tina
Irish, yes, the usual white in general, this is my quick version of this, for girls. And so - vodka-syrup is about 0.5: 1, but for me it's strong, my husband drinks this
Byaka zakalyaka
Tina, tell me whether it is possible to freeze the berry, and not soak it .... If the purpose of soaking is to remove the viscosity, then freezing can work just as well?
V-tina
Marina, it never even crossed my mind to try it so, unfortunately, I can't tell you anything
Piano
Soaked, boiled with sugar, drained. I tried it, beeee.
Will it change when dry ??
So tart, I can't believe it's edible.

P. s. first tried chokeberry.
NataliARH
Quote: V-tina
vodka apparently raises it
strange, it kind of normalizes it for a while, so I was told ...

Thank you for the liqueur, I'll give it to my dad along with the berries))) let him be treated!

Piano, Lena, has it cooled down in syrup? she will be fed with sugar ...

really she is beeee))) by itself, it's just scary to even see through it once again)

Elena, the berries should cool in the syrup!
And yes, the taste changes after drying, but the specific taste inherent in mountain ash will not go anywhere.

Piano
Tina, it has cooled down in syrup! Of course, it was not a kilogram of sugar, these are two handfuls of blackberries per sample, but the proportions by weight from the recipe and technology were respected.

V-tina
Elena, well, what can I say ... if not at all to your taste, then, of course, there is no point in harvesting ..
I am quite normal right after the syrup, but I can eat a couple of berries from a bush, but I like candied fruits, and my husband is so hooked on them, especially when they stand up longer and dry out
