The first preparation of cottage cheese was from 1 jar of dry sourdough + 1 liter of milk - I just stirred it and put it according to the program (I will describe it further). At the end, I took a spoon or two from the resulting curd into a separate jar for the next leaven (so as not to eat it).
So, I take out a jar of deferred sourdough for cottage cheese from the refrigerator, transfer it to a container with a sieve and stir it with 1 liter of milk. I put the container in a yogurt maker, cover it with a lid. I turn on the working time for 14-15 hours (it doesn't matter, because I usually have it by nightfall, and the cottage cheese cools there until morning, or if I'm lucky and get up, then I go up to it and unfold it), and press the button with the picture Curd. All. The machine is switched on.
At the end of the program (well, or as you remember)): you need to unfold the sieve. Attention! in many sources, as in the instructions, it is said that "turn the container" in order to discard the cottage cheese, and I did not understand how to turn it upside down? .. what to throw back? .. and stupidly studied the drawing and turned the container. It's simple - do not turn the container over, but unfold the sieve (from left to right) and install it on the existing side supports - I specially shot the video and this can be seen in my video.
Let the whey drain. Ready cottage cheese - first of all, put aside a spoon or two from it separately in a box for sourdough - otherwise it will be eaten and will not remain))! and let the curd go in the refrigerator.
The curd turns out to be tender, tasty, light, a little sour cream !!! Whoever loves - with honey, berries, dried fruits. And if mixed with chopped fresh herbs of dill, garlic, salt and good home-farm (in our opinion: kibbutznom) olive oil - EVERYTHING .., it's generally a dream! ..
P.S. Serum! .. We do not throw it away !. No no. There are many useful, medicinal and necessary substances in it! We wash our face and neck with it, and lubricate the hands - our skin, having received such nourishment, will thank us. We will bake delicious bread, pizza on whey, and knead the dough for pies ..
And if there are calluses, corns on the legs - while sitting in front of the TV, we will hold the legs in a basin with natural whey for 15-20 minutes, not forgetting to lubricate the knees as well - let the knee joints heal.
