Candied fruits Duchess

Ingredients

peeled zucchini 2 Kg
pears 1 kg
sugar 1 kg
lemon acid 2 tsp
vanillin 1 sachet (1g)
ground cardamom and cinnamon 1 tsp.
powdered sugar for dusting

Cooking method

  • Amazing fragrant candied amber fruits for decoration and pleasure.
  • Peel the zucchini from the skin and seeds, it is also better to peel the pears from the skin and seed capsule (I did not peel it). Cut the zucchini into cubes 1.5x1.5 cm, and the pears a little larger - about 2x2 cm (they boil down and dry out more).
  • Candied fruits Duchess Candied fruits Duchess
  • Dip the cubes in boiling water with soda, cooked at the rate of 1 tsp. with a slide of soda for 1 liter of boiling water. Keep there literally 2 minutes, rinse with cold water.
  • Candied fruits Duchess
  • Cover with sugar, spices and 1 tsp. citric acid, mix well and leave to give juice for 1-1.5 hours.
  • Candied fruits Duchess
  • Heat to a boil and simmer for 5-8 minutes, stirring gently. Zucchini cubes become transparent, but still whitish in the center.
  • Candied fruits Duchess
  • Close the lid and leave to soak in the syrup for 8-10 hours. After this time, the zucchini cubes will become almost completely transparent. And pear cubes are semi-transparent:
  • Candied fruits Duchess
  • Add another 1 tsp. citric acid and bring to a boil again. Boil for 2-3 minutes, close the lid and leave for 1-1.5 hours. Then put it in a colander and leave to drain the syrup. Collect the syrup.

  • Arrange candied fruits on drying trays, dry at maximum temperature for 4 hours, turn over, dry for another 6-7 hours at medium temperature. I have a Rommelsbacher DA750 dryer, I dried it by 3 degrees (corresponds to about 80 * C) for 4 hours, then I just mixed with a spoon and dried for another 6 hours by 2 degrees for another 7 hours (overnight), stirring occasionally with a spoon.
  • Candied fruits Duchess
  • Candied fruits at the exit should not be completely dry and tough. They should be dry but firm. These are:

  • Sprinkle with powdered sugar directly in the dryer and carefully separate the candied fruits that have stuck together. It should look like this:
  • Candied fruits Duchess
  • Heat the syrup to a boil, boil for 3-5 minutes and pour into sterilized containers. I got about 1.4 liters of real "Duchess". Can be drunk diluted with sparkling water. Can be used to soak biscuits.
  • Candied fruits Duchess
  • Candied fruits with a bright "Duchesse" taste, beautiful amber color. Store in jars with plastic lids or sealed with parchment. I got about 900g of ready-made candied fruits.

colorfully how! now I know where to put the zucchini
you can take apples instead of pears, what do you think?
Borkovna
Lina, what a beauty!!! Half an hour ago I read the topic of candied fruits from cucumbers and zucchini ... and that one again is so delicious! So far, it only stops that there is no electric dryer, I make tea in a gas oven, candied fruits ... 10 hours is a bit too much at this time, unfortunately.
Linadoc
Evgeniya, nope, there will be no such aroma. Better then candied mint anise to do.

Borkovna, Flax, someone already did it in the oven, wrote 6 hours is enough.

Thank you, Lina!!!! Now fine! I didn't read that topic to the end, I went to catch up.

Linadoc, Well, just a sorceress. There are zucchini, no pears. We'll have to buy.

What a beauty, precious amber!
Thanks for the work and the recipe, not complicated at all!

Linadoc, Linochka, tell me, please, why are we keeping it in a soda solution? I did the same with cherry and apricot syrup, but without using baking soda, it turned out insanely delicious

Yeah, Ksyusha, just amber turns out! It’s good that I didn’t "paint" anything.

Why do we keep it in a soda solution?
This makes it easier to soak with syrup and then dry. In addition, they then keep their shape well, do not fall apart into porridge. And I did it with syrup too, here... It would be necessary to make a recipe, otherwise they ask all the time. But there the taste is completely different.
Venera007
Linadoc, and my zucchini and so do not boil. And I don't cook them for a long time. Literally a couple of minutes, and then insist. I will have to try and compare with myself))
Elena Kadiewa
But why is this being done! How restless!
The only consolation is that I have no pears in the country!
Or is it upsetting? ...
Thank you dear Linadoc!

Linadoc, thanks for another fragrant delicacy,
I have a question about pears. Wooden green take? I really want to do that. The other day I made zucchini according to Tanya / Admin recipe with an orange, so they have already been devoured without change. And we respect duchess

Lina, and I also blanch without soda. It seemed to me that soda was needed for whole fruits to open the pores in the peel ...
With your submission, I have already made "orange" and "cherry" candied fruits from zucchini.
Yes, I still don't boil them in the resulting juice, I just strain them and dry them right away. True, I leave it for a day for saponification. And then I bring the juice to a boil and into jars.
It turns out great - marmalade, and more!

Helen
Awesome !!! It is imperative to do ... and take a tough pear?
Admin

From my own experience I know - take a pear that does not break apart when hot processing, especially in pieces.
Premier
This is where I just now came across information about adding soda ... scientifically based.

As they say, the beast came running to the catcher ... I was even surprised.

Soda is added when blanching vegetables and fruits, as this helps speed up cooking. That is, the time of heat treatment is reduced, which means that more vitamins and nutrients are stored in the product.
Like this.
But somehow candied zucchini and without soda, and without additional cooking, turned out great for me. Perhaps the dryer has reached the condition ?!

Oh, how cool, I don't have pears, I'll just try to make them with lemons. I didn't know about soda.
Linadoc
kil, Ir, do with mint... Delicious and without pears!
kil
Linadoc, Lina don't like mint since childhood, I'd better squeeze out more lemons, let them be lemon. Can add confectionery mix for flavor. In general, I will sniff and add. But if you add pineapple, will it smell like pineapple?

I made orange ones:
1 kg zucchini
300 g sugar
1 tsp lemon to-you
zest of half an orange
It tasted very good. Lemon works well too.

An4utka, I saw it, I don't want compote. Now lemon is dried, a portion of orange is infused in a saucepan. Let's see how it goes.

I do not mean compote, but the fact that the very principle is a pineapple worker)

Hello everyone! We finally got a dryer, I will experiment with recipes. My question is, how do you deal with midges that flock to fruit? Moreover, if the fruit is left in syrup for 8-10 hours?

Today on the market I tried to buy pears specially for these candied fruits ...

The two proposed varieties turned out to be about nothing at all, neither taste nor smell, one "Bulb", the second seller passed off as "Duchess", yeah-yeah), so I bought into his kindergarten wiring, otherwise I will never be Duchess did not smell or taste ...

As a result, I bought two kilos of the most fragrant and most delicious pears from my grandfather, grandfather does not know the name of the variety, a pear, he says, but a pear, she has no surname ...

It is not cheap, however, nowadays their own pears cost ... but for whom it is easy right now ...

Linus, question), the pears of medium ripeness I bought), even closer to ripe ones, are not suitable, do not?

Linochka, but what if, when preparing these candied fruits, we use 3-4-5 times alternation of cooking and cooling?

That is, we bring the zucchini with pears to a boil and forget about 12-24 hours ...

Or will the zucchini not stand such abuse?

And yes), today I finally bought pears suitable for this recipe, hard and fragrant !!!

Linadoc
Sadist Inna Both the zucchini and the pears are not seasoned enough to withstand this. And it is not necessary. They are perfectly completely soaked in syrup for 2 boils with an 8-10 hour break. Take action Manya Inna, .

Heat to a boil

Linochka, but in principle on what heat to bring to a boil?

For some reason, I prefer to do it over low heat, and suddenly I have been engaged in sabotage all my conscious life and do not even know about it ...

Linadoc
Inna, it is better on low heat, so as not to burn, but evenly warms up.
