Light chocolate muffins with curd filling

Ingredients

Dough:
wheat flour of the highest grade 190 g
eggs (weight without shell) 120 g
sugar 150 g
yogurt 200 g
olive oil 100 g
almond 50 g
vanilla sugar 10 g
salt pinch
baking powder 7 g
cocoa powder 35 g
Filling:
ricotta (cottage cheese) 250 g
sugar 50 g
For decoration:
chocolate drops
almond petals

Cooking method

  • Grind the almonds in a coffee grinder or in a blender bowl as fine as possible.
  • Mix flour with salt, cocoa powder and baking powder. Sift.
  • Light chocolate muffins with curd filling
  • Beat eggs with sugar and vanilla.
  • Add yogurt and olive oil, stir.
  • In 2-3 doses, add the flour mixture to the dough.
  • Add chopped nuts, mix.
  • Grease baking dishes or line with paper inserts.
  • Put 1 tablespoon of chocolate dough into molds, then add 2 teaspoons of ricotta mixed with sugar. Spread the remaining dough on top.
  • Decorate with chocolate baking drops or almond petals as desired.
  • Bake muffins in an oven preheated to 180C (convection 160C) degrees for about half an hour. Willingness to check with a wooden skewer, there should be no traces of chocolate dough on it.
  • Put the finished muffins on a wire rack and cool completely.
