Aromatic universal sauce

Ingredients

tomato 2 kg.
bulb onions 1 PC.
Sweet pepper 1 PC.
garlic 4 tooth.
basil, fresh parsley 30-40 gr.
sugar 2 tbsp. l.
salt 1-1.5 tbsp. l.
peppercorns black, red, white 10-15 pcs.
allspice peas 5-7 pcs.
vegetable oil 4 tbsp. l.

Cooking method

  • It is better to take meaty tomatoes, wash them and cut them into halves.
  • In a frying pan, heat the vegetable oil, fry the pepper chopped in a mortar for a couple of minutes, then add the chopped garlic, fry for another couple of minutes, add the diced onion here and sauté it over medium heat until transparent, add the diced bell pepper next, sauté another 3- 5 minutes.
  • Rub the tomatoes on a grater, discard the skin. Pour tomato juice into a saucepan, add vegetables from the pan, salt and sugar to taste (a little less than the taste we need) and boil over medium heat for 40-60 minutes, depending on the desired consistency.
  • Chop the greens and add to the sauce, bring to a boil, then cool a little (I leave overnight) and grind the mass with a blender - you can until a puree-like state, or to small pieces. Taste again, if necessary - adjust salt and sugar, bring to a boil and pour into sterilized jars, roll up or twist lids and leave to cool, wrapped in a blanket.

I made a sauce, from three kilograms of tomato it turned out about three liters of sauce. Tomatoes are very watery, no matter how much I boiled, it still turned out to be a liquid sauce. I think for a pasta like Bolognese it will work fine. Ingredients for a 300 gram jar:
10 large meaty tomatoes,
4 sweet apples,

1 tsp honey,

3 large cloves of garlic.

Preparation:

Combine tomato and applesauce in a saucepan, put on low heat and simmer until thick for about 10 minutes. Then add pepper, cinnamon, nutmeg, salt, honey and cook for another 10 minutes. Add vinegar, chopped garlic, boil for another 5 minutes and immediately put in sterilized jars. Roll up.
