Lemon lavender ice cream

Ingredients

Milk (I have a village) 500 grams
cream 33-35% fat 250 grams
lemon zest 1 tsp
lavender flowers 1 tsp
sugar 100g
honey 60 grams
yolks 3 pieces
starch 20 grams
salt pinch
xanth gum (optional) 1 teaspoon under the knife

Cooking method

  • Remove the zest from the lemon.
  • Pour milk over lavender flowers and zest.
  • Boil.
  • Cover and leave to cool completely.
  • Strain through cheesecloth and squeeze the zest with flowers.
  • Put the yolks and salt in the milk.
  • Stir.
  • Mix sugar with starch.
  • Add flavored milk.
  • Stir.
  • Put honey.
  • Lemon lavender ice cream Bring to a boil with constant stirring and cook until thickened.
  • Leave to cool completely, cover with contact foil.
  • Add gum to the cream (it is quite possible to do without it)
  • Lemon lavender ice cream Whisk very cold cream until light. Beat at first at low rpm, gradually adding speed.
  • Lemon lavender ice cream Introduce the brewed mass in several steps, whisking constantly.
  • Place in the freezer.
  • Stir during hardening 3-4 times with an interval of 40-60 minutes.
  • Leave the ice cream until it solidifies.
