Blackcurrant jam Delicate berry in light jelly (measuring the constituent with a glass)

Ingredients

Black currant 5-6 st. slightly riding
Granulated sugar 6-7 st.
Water 3 tbsp. (For those who love deeper, 2 tbsp.

Cooking method

  • Forgot the scales at home! I remembered an old and beloved family recipe from my mother’s friend and employee Tamara Birya. I had to call for the Urals! All components are measured in a measuring glass. You can cook it in just half an hour, and the result is wonderful. The berries are tender, filled, their shell is thin and does not scatter, they float in a delicate transparent jelly.
  • Try it.
  • - We sort out the black currants, wash them in several waters, dry them without fanaticism. The berry should be ripe, but not overripe. That is, when washing, keep the shape and not blur, but be soft to the touch. We measure out 5-6 cups of currants. I make for 6 glasses to make it thicker.
  • - We measure out three glasses of the purest water into a container for making jam.
  • - We measure the sugar in advance! And then as you start pouring, someone will definitely distract. Sugar 6-7 glasses. I do for seven.
  • - Heat the water to a strong boil and immediately add all the berries, bring it to a boil and boil for exactly 5 minutes at a low boil.
  • - After that, gently and gradually add sugar, mix gently and bring again to a boil over medium heat. Boil again for 5 minutes. In the process, remove the foam.
  • We pour, evenly distributing the berries, into sterile jars, close or roll up with sterile lids. Turn over and put on the lids. Checking if the jam is flowing?
  • We put it under a warm blanket or pillow until it cools. I wrap the banks in newspapers beforehand. You don't have to wrap it up, but I always insure myself.
  • To evaluate the final result, the jam should stand for a while in the jars. We have been opening since October.
  • In the photo, the jam of last year.
  • I tried to photograph everything better in the absence of light and camera.

Perhaps there is a similar recipe, but I did not find it! So I apologize in advance.
I replaced about 1/3 of the sugar with zhelfix in the second portion, it turned out sour and somehow thin. I did not like.
I returned to sterilizing cans in dry form in the oven, the cans are cleaner, and there is no need to drain the water to burn. There are no streaks from boiling water on the walls. And the lids just boiled for 3-5 minutes.
Packaged in 450 ml jars.

7 glasses of sugar, 5 glasses of currants, 1 glass of water I bring to a boil, boil for 5 minutes. I pour the boiling jam into dry clean jars and roll it up. It turns out gorgeous almost jelly. I've been making this jam for over 20 years.

Everything will be fine, the portion is small, so I advise you to try it according to the recipe. And the sugar will settle down. You still have the syrup separately, but the berry has not given up all the acid. I've replaced some of the sugar in the second portion with Zhelfix, now I'm sorry. And less sugar, compote will turn out. And let it stand to gel. Maybe it's true, the berries are large. I have medium, large, but not like a small cherry, smaller. And yet, it must be evenly poured into jars.
