Ingredients

Eggplant 1 kg
Bulgarian pepper 0.5KG
Garlic 1 head
Bitter pepper 1 piece (10-12 cm)
Sugar 1 tbsp. l.
Vinegar 50 ml
Salt 1 tbsp. l + 0.5 tsp + 0.5 tsp
Tomatoes 0.5KG
Vegetable oil 100 ml

Cooking method

  • All my vegetables.
  • 1. I cut the eggplants into large cubes. About 2 * 2 * 3 cm. Salt to taste, about 1 full tablespoon of salt and leave for 1 hour to drain.
  • 2. Making the sauce.
  • Bell peppers, bitter peppers, garlic and tomatoes are chopped in a blender (I use a knife, but you can also submerge. Whoever does not have a blender - just grind everything in a meat grinder).
  • 3. Drain the sauce into the saucepan of the pressure cooker. I add vinegar, sugar, salt 0.5 tsp.
  • FRYING - PRESSURE 3. After boiling, I switch to HEATING - PRESSURE 1 and cook for 10 minutes. I stir it.
  • 4. I squeeze the eggplants well and fry in a pan in vegetable oil. I add them to the sauce in the saucepan of the pressure cooker (along with the oil from the pan). I put another 0.5 tsp. salt and mix well.
  • MANUAL mode - PRESSURE 2 - 7 minutes.
  • I bleed the pressure forcibly.

  • I put them in sterilized jars and seal them. You can refrigerate and eat immediately. It turned out very quickly, tasty and moderately spicy!
