Easter is approaching, and I decided to experiment with baking.

My favorite recipe:

I took out the old forms, last year's, those that Lilya threw in, I had 5 types of them. Which one I baked, I could only guess, because I completely forgot.

Milk - 280 ml
Vanillin - 3 grams (1.5 sachets)
Glaze: 1 protein + 180 grams of icing sugar
Sprinkling, about 10 kopecks.
All this was delayed by UAH 31.92.
And don't forget the raisins or other ingredients, if you add, they cost money too!
For electricity and other "nonsense" I added 6.38 hryvnia - 20% of the cost of food, well, I use the oven, bread maker, coffee grinder for powdered sugar, blender water, detergent.

The most interesting thing is that the dough after kneading was 1815 grams, and when it was laid out in forms, it became 1765 grams (I agree that some remained on my hands, but not 50 grams, and there are no complaints about the scales - they were "checked" in the summer).

Filled out forms 2/5.
The dough piece is about 450 grams per 1 dm3 or simply a liter.

Of all these products, I got the Percentage
1. Large form 150/112 51%
3. Form medium 110/85 21.5%
4. Form medium 90/90 14%
5. Form small 70/50 5%
and there are still 150 grams left, 8.5%
therefore, if I put in a small 70/50 Mold about 80 grams of dough, then three small cakes would come out.

I forgot how these working hours are called correctly, let's say the standard hours. To begin with, take the average salary of a baker in your city, divide it by working hours and find out how much you should receive for each hour of your time spent on all the products you cook during this time, so add it to your cost of products, all costs.
But I don’t know if you can sell your Easter cakes at that price then? This is another question. The mills have a well-functioning technical process, production volume, and many other factors that make the cost of production "acceptable" for the buyer. And here, it seems to me, the price should go gold. Although, if you manage to sell your Easter cakes for a large amount - honestly, I will be incredibly happy for you.
Well, if this calculation does not suit you, then just think how much you would like to receive for your work and then boldly set the price by dividing it by the amount of products, well, or calculate how much you would earn on cakes in the time you spent on Easter cakes. I want to make extraordinary Easter cakes for our backwoods, well, and they are not very expensive for the price, and I will hope that something will still be sold with me. Here, my cakes are also more expensive than store cakes, but customers still order. So with Easter cake, I think it should be the same, because homemade baked goods are more valuable, and they are definitely tastier. And every year my relatives order me a bunch of pies, no one bakes (like an excuse "I can't"). So it turns out in a day from 40 to 50 paskas I bake, decorate ... I like not big like coffee 200g. The very thing, just for consecration I bake a little more, well, they disperse very quickly ... I made at least 3-5 pieces to everyone and they are glad. And the family on Easter just cracks them up so that they say to eat up for the whole year!

Fast Renko figured out how much and immediately told them the price per kg-45 UAH (but in my heart I think it's probably expensive), and when I called my work and found out that a simple bakery plant costs 40 UAH per kg, then it turned sour completely, then I went there and butter and milk from her own cow and homemade eggs and dried apricots, raisins, candied fruits, peanuts. Here. And people were satisfied with the price and quality.

And I took butter of the "Light" type (in the sense of cheap - at 12 UAH per kg - I wanted to calculate the cheapest cost) - the dough turned out wonderful and although I forgot to put vanilla, it smelled all over the house!

Calculate the cost of the entire amount of fully cooked dough, before placing it in the molds. Then put the dough into molds and weigh them, determine the weight of the dough without molds (containers).

Firstly, the dough according to different recipes of different weights, and some need to be put on the floor of the mold, and some third, and should rise with a beautiful hat. So only by experience can you come to the desired result. Paper forms of different sizes and on the packages it is written for what weight the dough is designed for. So try different recipes, write down the dough weight, mold size, finished weight and height.
