Bread with carrot puree and pumpkin flour

Ingredients

active wheat sourdough 100% moisture 200 grams
carrot puree 100g
pumpkin flour 50 grams
wheat flour / grade 300 grams
water 120-150 grams
pressed yeast 3 grams
salt 9 gram

Cooking method

  • Sourdough feed the day before 5-8 hours before kneading. The finished sourdough smells good. Increases in volume by 2-2.5 times. The top is covered with bubbles. A strip may form in the center, which signals that the leaven is about to settle.
  • Peel the carrots, cut into thin rings, add a little water.
  • Put in microwave at full power for 5 minutes (you may need less or more time).
  • If there is a lot of liquid, then drain part.
  • Puree carrots with a blender or rub through a sieve.
  • Dough
  • The batch was made in KhP (7 * 5 * 12)
  • Combine starter culture, water, puree and yeast.
  • Take a minimum of water first. Add as needed during kneading. The amount of water will depend on the thickness of the puree and the moisture content of the flour.

Delicious, aromatic bread. The recipe is fancy. Recommend!
Perhaps someone else does not know, but this bread and any other can be baked with one leaven. Just exclude yeast. Naturally, all processes (fermentation and proofing) will be slower. The time to bake can be doubled.
