Twill - airy decor

Ingredients

glucose syrup (corn syrup) 20 g
flour (part can be replaced with almond) 11 g
melted butter 15 g
light brown sugar 10 g
cognac 2-3 drops (1 g)

Cooking method

  • Twill - airy decor
  • Twill is my love. Amazing decor, light, airy and delicious. It can be colored or painted with dry dyes.
  • In a bowl, combine melted butter (hot) and glucose syrup. Add sugar and flour. Mix. Add alcohol. Mix. Everything, the mass for twill is readyTwill - airy decor it is liquid, as it should be.
  • If you need color, then we paint, I have gel dyes. Please note that light colors cannot be obtained, since the sugar caramelizes and darkens. I did it in turquoise (I wanted blue), brown (I replaced some of the flour with cocoa powder) and red (I got what I wanted). White turned brown and was courageously destroyed by the household.
  • Now, with a teaspoon, we place the circles on parchment or a silicone mat. The ones on the left I planted first, they have already blurred.Twill - airy decor
  • Now we put in the oven preheated to 180 ℃ with convection and we detect for 3 minutes.
  • Twill - airy decor
  • Twill is not ready yet, but we are at a low start! We squat down and watch closely. At first it will seem to boil, then the appearance of new bubbles will subside. As soon as you see that it has almost disappeared, the twill is ready. It cannot be overexposed, otherwise all the shine will disappear.
  • Twill - airy decor
  • And this is overdried twill with the replacement of glucose with invert sugar.Twill - airy decor
  • While it is hot, it can be bent, rolled. But there will be enough time for a 3-4 maximum, then it will simply break.
  • Now it can be painted. I have dry fat-soluble dyes.
  • Twill - airy decor
  • Store in a cool dry place in a sealed container for about a week.
  • Application options:
  • Side of the cake

Natasha, very interesting decor! And it's easy! I just don't know - do we sell glucose syrup?
prona
Anna, I think yes. Maximum through the online store can be ordered. You can also replace it with corn syrup, which we sell in ordinary stores.

Olya, thank you very much
Evgeniya
prona, Natasha, thanks for the recipe! It turns out very nicely! Do you need to break the twill into small pieces to decorate the sidewall? Can you store it?
Loksa
I'll take it right away, then I'll go read it, I hope it's not very scary! Natasha, Thanks for the recipe!

Yes, just paint first if necessary.
Quote: Evgeniya
can you store it?
I have it for about a week, and, of course, the humidity in the room greatly affects.
I make it the day before decorating the cake.

And without convection, it is impossible, will not work?
prona
Tatyana, but it is possible Only usually, if without convection, then add 10 ℃.

Tell me, if you stick this decor on a mousse cake, will it melt? On what surfaces did you glue it?
prona
Anna, I put twill on mousse cakes, if you stick it, it will just soften (look and color unchanged) and will hold. It doesn't melt.
Glued it on ganache, glaze, napazh, protein cream.
Luera
Thank you! Great, we will try)
prona
Anna, good luck!
Loksa
And I missed the medal. Natasha, Congratulations

Natasha, how do you paint it? dry paint already baked? just dusting?
prona
Oksana, there are two options, either add to the dough (bright, dark colors) or powder it with a brush (gold / silver).
Quote: Loksa
Congratulations
Thank you
prona
Five colors out of one serving (the main thing is to choose the right ones). Green and orange with dry dye in the dough, red and dark brown - gel, right-most - no additives.

Glued it on the glaze
And what can be used for the mirror glaze?
Marina22
Elena_Kamch, the mirror glaze itself is sticky. Everything sticks to it.
Elena_Kamch
Marina, Thank you! I just think, what if the surface will deteriorate if you put it directly into the glaze. As soon as I watered, I put it on? Or wait a little?
Marina22
I would wait for the frosting to cool down. It's still warm. But let's give Natasha a little more rain.
