Fermented tea "Mojito" from mint leaves, grapes and cherries (page 2)

Smile
Lasto4ka, the tea turned out to be very fragrant and tasty, but with an unexpected, laxative effect I did not make any deviations from the recipe, the only thing was that I did not roast it in the oven, I dried everything in a dryer, and then dried it in a cloth bag. Mush laughs and says I am on the right track for potions.

And if a little more seriously, my acquaintances also chuckle - all as one say that there is a pronounced diuretic effect. And several people just scold me (joking of course), they say it's impossible to work after my teas, they fall asleep on the go

I drank my tea for a year. Now, from the purchase pressure strives to jump. And tasteless. This I mean that when the pressure drops, the liquid leaves well. Have your friends had problems with blood pressure or is it going down completely? We must pay attention. Strongly low pressure is bad.
Radushka
lily_a, I bought it for a long time tasteless! Green gave me cramps in my hands (now I understand that tea)
Yuri K
lily_a, yes, we are doctors, I work at the ambulance, we do not have low blood pressure purely physically, we are always under stress

Radushka, just yesterday I watched the show how the coffee is falsified with the chemical caffeine. Exactly the same is probably the case with low-grade, and in other matters, and any other teas, they probably do. It would be nice if it was tea at all ...

I praise: girl_pardon: Hurray !!!! Done !!! I finally made a * mojito *. I have no time at all, I have no time for anything, grape leaves probably lay in the freezer for a month, Yesterday there was no water at home, so I decided on * mojito * so as not to waste time. defrosted, twisted with frozen mint and cherries, stood on the stove while baking and cooked for about 5 hours, probably, today I finished it dry and hung it out in a pillowcase, tried it - pleasant sourness, mint and cherry, it felt weak .. and the color of green tea is very pleasant) )) made according to the recipe 70/20/10. like green tea - quite worthy, I will take it to work, I will offer it without saying that my own, I am interested in an independent opinion.
(whispering) I didn't have any side effects from a big cup of tea
Thanks for the recipe !!! I will still do

forgot to add - grape leaves, common isabella, peppermint .
that's interesting
Nadya2016 unsubscribe, how does it taste with basil?
Lasto4ka
Pani irina, Ira, that's great that the tea turned out! And yes, it comes out light. Drink to your health!
Katerinka
today I opened to sniff the mojito I made at the end of June, and at first it smelled like grass. The smell has now been replaced by a pleasant smell of mint and something else is slightly caught. We haven't managed to brew it yet, we'll see later how the taste has changed.

It turned out to brew a mojito, it smells nice of mint, but I didn't taste it. What surprised me is the color, although the cherry is decent, but it is light, my husband and I liked it. And the taste is mmmmm! Beyond words. Not a drop of sugar is not present, and he is sweet, even his husband drank without sugar! And there is absolutely no sourness from the grapes, although I thought it would be. Thanks for the recipe I will do more
Lasto4ka
Katerinka, Katyusha, I'm glad that you and your husband liked the tea! Drink to your health!
Yuri K
Lasto4ka, I also matured to a tea similar to your recipe. My grape leaves appeared by accident, abandoned, of course what kind of variety is unclear ... but late, green. True, I previously fermented them in a liter jar by ramming them. Not impressed with the result, threw it into the freezer later. There is also mint, I regularly collect it while fishing along the river)) An additional mass will be a mixture of apple leaves + pear (I have enough of this now), I deliberately exclude cherries this time, it is unpredictable in mixes.
Lasto4ka
Yuri K, to your health! It will definitely be delicious!
Radushka
Yuri KWhat cherry is unpredictable? I have it stable stinkssmells strong
Yuri K
Radushka,, here I am about the same, I want different tastes, and not all ke ge that would smell like cherry.
Radushka
Yuri K, there is no strong cherry smell in the mojito. Just a tint aftertaste. I take 7% by weight. By the way, part of the mint was replaced with lime lemon balm. It turned out very tasty
Yuri K
Radushka, yes made without cherry, hanging, "resting"
Any mint is interesting to me, but I only collect wild, there are no garden options in my destinies
Radushka
Yuri K, buy seeds, give your mother-in-law. You can plant a whole collection. Mint is very unpretentious. True, aphids are amazed, but I just often cut them and leave aphids without food)))
Yuri K
We could not resist, we brewed it this morning. What can I say: the tea turned out to be peculiar, the grapes apparently give some kind of taste, there is no mint at all - I was very surprised ... The tea is light, despite the fact that I added a good portion of apple and pear leaves. It is likely that the acidity of the grape leaves did their best here. Not my tea, unfortunately, but there is someone to like
It's a pity for mint, as if I didn't add (((I took out two whole packets.
Katerinka
Radushka, you eat mint aphids !? On the contrary, the only thing that does not touch me is mint, I even think about planting every tree on the side, suddenly it helps to splash children do not want to eat apples, cherries and so on from the trees.

Yuri K, and in the aroma of Mint is also not felt? I don't taste it either, but the aroma, yes, it is pleasantly mint! Tea with cherries is also light.

But my tea opened after 1.5 months, at first the grass was in general both in taste and aroma!
Natalo4-ka
Quote: Yuri K
Not my tea unfortunately
Yuri, try it cold or even with ice. According to your heat, the very fact, you may still like it))
Yuri K
Natalo4-ka, Katerinka, let it stand better)) Perhaps something will change in it))
Katerinka
Today I gave my sister this tea! So she didn't like it either! Says that the aftertaste is not hers at all. So I was sitting and enjoying myself, I was thrilled while I was drinking, after the bath, and she sat with the same mug and choked so that the taste and color of the markers are different! But it's better for me - I'll get more!

But the wine-yager (grape apple geranium) she checked out, very much, and I have not enough of it! : girl-th: Maybe cherry, or mint gives just such an aftertaste, although she loves mint. Tomorrow I’ll pour a mono cherry for her and we will understand the reason.
Who cares about wines-yager, it is prideful in equal proportions apple and grapes (a little more apples) and geranium for color, you can do something else with a dull taste and good color, but still it turned out light tea.
This I mean, it's not about grapes!
Yuri K
Quote: Katerinka
This I mean, it's not about grapes!
Just the same in the acid contained in the grape leaf))) There have never been any complaints about the color of geranium, and it is added to give a rich color to the mixes. I don't have it, I add hardened pears with an apple tree. And the frying gives a little color.
Katerinka
Yuri K, I just wrote a taste that grapes do not give a shade of taste. And I also get a light apple.
Yuri K
Katerinka, well, I don’t know, my apple + pear give a good color. I have never done mono from anything except sage. I can't say anything about the mono apple ... I added sage wherever possible, while it was in the juice, blooming. He replaced geraniums for me, just as it gives a rich color.
But I just didn't like the taste of grapes ... I'll try again by hardening, the first one I got out of it - fermented in a jar at first, not quite according to local technologies, that is, shaman
Katerinka
Yuri KAs you say, fermentation does not change the taste, it’s just that it’s not so saturated in the jar, but then you still went to the local technology, I already wrote to you.
Silyavka
Svetlana, please explain, for those who are in a tank in an armored train, do you need to fry? I have the lowest temperature in the oven, 180 degrees, there is nothing to measure the temperature with. Maybe you can skip this step? I'm not even a beginner in this business, but a complete zero. I read it and really wanted to try it.
Lasto4ka
Silyavka, Helen, I give a quote from Lyudochka's main tea recipe:
“You can dry tea according to the method that Chinese manufacturers use for certain types of tea. This method is called "frying". To do this, at the beginning of drying, set the temperature to 125 - 150 * for 10 - 20 minutes. This temperature allows the plant sap sugars to caramelize on the top of the granules and seal the rest of the sap inside. Then dry the tea as described in the recipe. This method gives a light caramel aroma and flavor to the tea. "
Now I fry all my teas myself. This method gives a richer flavor and aroma and a darker color.
But it is with spicy-aromatic plants that frying is not needed and can be omitted altogether (or only part of the tea is roasted). The heat kills the aromatic oils.
If you wish, you can literally fry some of the tea in a frying pan. And then compare both options for yourself. Or you can mix the results.
Try, experiment, there is no universal recipe
Silyavka
Svetlana, Thank you for your reply.
Katerinka
Elena, the frying is done with the door slightly open, so you will have less than 180 there, somewhere 150 will probably be. And in terms of a thermometer, you just feel it when you stir it, I do it with my hand to feel that it has dried a little (about 7-10 minutes) depends on a lot, take it out and dry it in the usual way. I did so, it turns out fine, the only thing is to stir it neatly, you won't get burned! Then I took the aerial, it’s more convenient with it. And in a frying pan, I can't imagine how, there you can't guess the temperature at all.
Silyavka
Katerina, I don't have an airfryer, I think to dry it like Sveta, in a dryer.

I would like to feel a little bit. I love the smell of mint, especially lemon balm. This is why I do it for the first time and ask as much as possible and as possible.

Helen, fermentation slightly transforms the taste and smell of mint. All for an amateur. So I always make sure to just dry the mint leaves. Such a classic version. Then you can add them wherever you want.
Silyavka
Lasto4ka, Svetlana, yesterday she collected a little bit of leaves, it turned out only 250 grams of collection, wrapped it in a sheet, today passed it through a meat grinder twice, put it on fermentation. The question arose how long to ferment? Or is this process independent of weight? The smell is breathtaking. I want to try it now, but I understand that I need to complete the process.
Lasto4ka
Silyavka, Helen, 250 gr is not enough, of course. But how many nibbled. During fermentation, the main thing is that the layer is not less than 8-10 cm. And then everything is as usual. If done by hardening - 3-4 hours. If not, about 5.
Silyavka

Uh, how's that? I wrapped it in cloth. He lay with me all night.
Katerinka
Silyavka, I thought that you want to fry, apparently I misunderstood. Therefore, I painted. I also dry it in the dryer, I just fry it sometimes in the AG.

Silyavka, hardening is also called the Zechariah method. On the first page mine is detailed.
Silyavka
Katerinka, thank you for the hint.

I will read it again. I just read a lot, everything did not fit in my head, I didn’t understand something, I didn’t remember something. Thank you.
Katerinka
Elena, yes it is, at first when you read you think, oh gods, can I? Do I really need it? And then you realize that fear has big eyes. And when you do you think why didn't you start doing this before?
Silyavka
Katerinaexactly exactly

Now I put it to dry, but I myself think that you can pinch it in the garden.

Lasto4ka, Svetochka, that's what I ended up withMojito fermented tea from mint leaves, grapes and cherries
Dried in a dryer at about 50 degrees, without frying. I tried to crumble several granules, did not find any dampness, turned off the dryer and poured it into a cotton bag and hung it up to dry. I hope I did everything right. To say that the smell is super is to say nothing. There is only one question left. How much to dry?
kogan_
Quote: Lasto4ka
I didn't want unnecessary gestures, and my freezer is full. Well, the meat grinder, as I understand it, can cope without freezing.
Do not beat me hard for sedition, but withering can sometimes be skipped, especially if the meat grinder is at hand !!! ... What is really there! Even the final drying process in a pillowcase can be skipped if, after drying, the tea has been sufficiently held on a standard final drying (long-term holding on the lowest heat in the oven or in a frying pan)!

Quote: Katerinka
... it is sweet (tea) even my husband drank without sugar!
Good teas should not be bitter (this is especially true for cheap, store-bought teas (bitterness that must be eliminated with sugar)). And homemade teas are good because they Qualitative, therefore they do not need sugar, and if you have to sweeten it, then instead of the usual "pair" of spoons, one is enough.

Quote: Katerinka
And in a frying pan, I can't imagine how, there you can't guess the temperature at all.
There was somewhere on the forum, about a frying pan. "... Dry over medium heat, and finish drying on the smallest."

Quote: Katerinka
... I do it with my hand to feel that it has dried a little (about 7-10 minutes) depends on a lot, take it out and dry it in the usual way. I did so, it turns out fine, the only thing when stirring gently, not get burned!
I mean, there is no need to be afraid of burns, stirring with your hand is the very thing. At the beginning of drying, when the temperature is high, you will not burn yourself as the sheet is wet and therefore tolerable. At the end, when the leaf is dry, the temperature is not high anyway. So, we do everything by hand! This approach is also good because the hand does not damage the granules, unlike the scapula.

Quote: Silyavka
The question arose how long to ferment?
Fermentation, in the classic version, is necessary to the maximum smell (for the first times, until you penetrate, you can wait for the understanding that the smell has begun to subside).
