  • Black currant has long enjoyed well-deserved success among all fans of full bins. A wonderful plant, the berries of which we gladly eat raw, in the form of a variety of jams, compotes, raw jellies. And we use the leaves as a fragrant addition to pickles and marinades.
  • Oh, what a temptation to make a REAL tea from blackcurrant leaves!
  • But alas and ah! In the mono version, the currant turns out to be insidious. It requires special conditions! ABSOLUTELY does not form granules when twisted in a meat grinder. And the color of the brewed tea is very little like tea, as we are used to seeing it.
  • I wanted to find a partner for the currant who would compensate for these shortcomings and not overshadow the advantages of this magnificent plant!
  • Three versions of currant tea were made.
  • Currants (50%) - apple (50%), currants (50%) - strawberries (50%) and currants (50%) - raspberries (50%).
  • The first two teas are granulated, the third is sliced.
  • The leaves wither and froze as they accumulated. They froze well, because I don't have so many currants and it was difficult to accumulate. Freeze-thaw three times.
  • The leaves were twisted well. Twisted it twice. The first on a large grid, the second on a smaller one.
  • Sheet - rolled "rolls" and immediately cut. Quite wide, because the currant leaf was not cut as well as the raspberry one. I was torn. She covered the sliced ​​tea with a wet towel, a plate and put a jar of kvass as oppression.
  • All teas were fermented 3 hours prior to drying. I dried all three teas in a dryer at 70 degrees. BUT ... 1/3 of the chopped currant-raspberry was fried in the oven at 125 for 10 minutes.
  • Result: granules with strawberries are stronger and larger than with apple trees and much larger.

  • The taste ... with an apple tree is mild, with a strong currant note. With strawberries, it is more tart, harder and less visible currants. But, it is quite recognizable. The most delicious was the mix with raspberries. Quite bright currant taste and aroma, and raspberries do not muffle it at all, but only emphasize it.
  • All teas, in my opinion, may well be called currant.

My husband and I arrived at their tea plot by the forest and came across a bush of forest currants. Stupefying smell! And just before the trip to the forest, I read the materiel and came across this topic. Well, I could not get past this bush. The leaves on it are young, even, and fragrant, right up to the stupor. They also picked a young dog rose and wild strawberries. Well, Ivanushki, of course. All this has dried up at home, I can't say the proportions, but Ivanushki added at least 40% on purpose, because the smell of currants is very strong for me, almost aggressive. There, I also added sepals from strawberries to the mix, my husband bought it successfully, on time. I was not at all happy about the berries, as much as these sepals. The dried mixture was poured into the freezer 2 times according to the method of Zacharias. I smelled packages all the time. The bouquet of smells was amazing. I missed the meat grinder twice, the granules are strong. I put it on a fry for 10 minutes, then reduced the temperature and dried it. At the beginning of drying, the smell was, then it began to transform and disappeared altogether. No, of course, the finished tea smells a bit, but there is no such pronounced currant smell. She brewed a freshly made one, treated her daughter and son-in-law to those who came. They are delighted, asked to pour with them. They did not even want to listen to my explanations that, they say, dry fermentation and so on. I also liked the seagulls. The smell during brewing is mild, not obtrusive, the taste is there, very pleasant, not watery, well felt, the color of the infusion is brown, closer to dark.
