Baked liver pate with cottage cheese (dietary)

Ingredients

Chicken liver 400 g
Curd 2% 250 g
Chicken eggs category C1 2 pcs.
Small carrots 1 PC.
Onion (very small onion) 1 PC.
Corn starch 2 tbsp. l. without slide
Salt, pepper mix, nutmeg to taste and desire

Cooking method

  • Recently, I have often cooked the liver, especially since I was recommended to give it to my child. In its pure form, it quickly becomes boring, so I went to look for variety on the Internet. I also wanted to try a new blender. From all that I found, I built my own version, which I share with you.
  • So, cooking procedure: removed all the veins from the chicken liver, cut it into pieces, ground it with a blender not too finely. I chopped the onion on a fine grater, rubbed the carrots on a fine shredder, added to the liver and ground a little more with a blender.
  • I also laid out the cottage cheese there (I had a fairly small and crumbly one), broke 2 eggs, added salt, a little spices and mixed well.
  • In the resulting minced meat poured 1 spoonful of starch and mixed. I advise you to do just that, focusing on the consistency. If the curd is runny or the eggs are very large, more starch may be required. Starch is easily and naturally replaced by flour or semolina. With semolina, it is better to let the minced meat stand before final cooking.
  • The minced meat turned out to be like thick sour cream in consistency, a little fluid.
  • Actually, this is where you can proceed to the next stage. I baked pies in the oven in silicone cupcake tins. I want to say that it is very tasty, greatly speeds up the cooking process, eliminates the smell of overcooked oil, is healthier than fried, and so on along the list ...
  • In general, if you still want to fry them, do dough the minced meat is thicker by adding more starch / flour / semolina or fewer eggs, but I highly recommend roasting the pates in the oven at least once. You can also use steam, but in the oven you get a delicious crust.

  • From the resulting amount of ingredients, I got 12 servings, I baked them at 180 degrees for about 25 minutes.
  • Ready cutlets I left the pates to "rest" in the molds, covering them with a silicone mat.
  • The result pleased both me and more fastidious eaters.

I cooked it from chicken liver, because it was lying in the refrigerator and waiting for its fate. I think it will be no less tasty if we take other types of liver as a basis.

And all that is necessary to add cottage cheese, everything else seems to be clear, well, and a gorgeous find to bake cutlets in forms, I think the "foil" ones will do the same. I also love baking cutlets in the oven, but in order to keep the liquid minced meat in shape, I had to add flour, and now I poured all the cases into the mold. Thank you!

Marina, in the traditional version you don't eat much, for me and my son even 2 liver cutlets are already a lot, even though my husband eats a lot, but the cottage cheese should soften the taste. in your recipe I did not change anything, acrom the fact that I cooked carrots in the microwave. I always add stewed vegetables to the liver. it turns out so tender and juicier. and also added a spoonful of fat sour cream. children love more tender ones.
