Ingredients

Greenish apricots, unripe 700 grams (prepared, pitted)
White sugar 40-50% by weight of fruit
Orange zest 1/2 pcs. small
Lemon juice 1/2 pcs.
Caraway seeds 1 / 3-1 / 2 tsp. taste
Brandy (cognac, rum) 1-2 tbsp. l. taste

Cooking method

  • I take apricots a little unripe to get a slightly sweet and sour taste of jam, which goes more with cheese than just a sweet taste of jam.
  • Caraway also needs to be selected to taste, it goes very well with cheese and apricots.
  • And I liked the caraway seeds in the seeds, this way the piquancy of the caraway seeds, its taste are better manifested - and the seeds do not interfere at all in the whole form.
  • Put pitted apricots in a saucepan, add sugar, orange zest, lemon juice, bring fruits to a boil and simmer apricots until soft over medium heat.
  • Reduce heat, beat with a blender, until lightly mashed, and continue simmering.
  • Add caraway seeds, brandy to the mass, and boil until jam. Stir the mass periodically so that it does not burn.
  • The photo shows how the jam is gelling on the sides of the pan, towards the end of cooking. And if you push the edges of the jam with a spatula, you will see a wide strip of the clean bottom of the pan.

  • The finished jam can be stored indoors.

It is the main flavoring component when salting lard, cabbage, cucumbers, tomatoes. Boil jacket potatoes with caraway seeds.

Caraway seeds mixed with anise, coriander and fennel are good to add to jam, especially low-aromatic, ground - in hot dishes (10415 minutes before cooking). Caraway is harvested with the onset of the waxy ripeness of the fruit, when 75-80% of them have a brown color. Dried in sheaves, on mats where the fruits ripen. The best variety is Khmelnitsky.
