Ingredients

vegetable oil for frying

Cooking method

  • As soon as the season of young potatoes comes, ... potato pancakes settle in my family. In order to somehow diversify the menu, all sorts of different seasonal vegetables are used as an additive: both tasty and healthy and potato pancakes.
  • To prepare potato pancakes with vegetables, we peel all the vegetables, three potatoes and onions on a fine grater, pepper and carrots - on a larger one. If desired, you can add a tomato, but then we peel it and seeds and chop finely, chop the greens finely too.
  • Add the egg and flour to the grated vegetable mass, mix everything, salt and ground pepper to taste in the same place. Pour 4-5 tbsp into the pan. l. vegetable oil, heat it to a boil and fry our potato pancakes without covering, until golden brown on both sides.
