  • The dough preparation technology is indicated in the recipe, which can be read at the link above.
  • Form oblong buns from the dough. We put it on for proofing for 30 minutes (I defrosted the dough in the microwave).
  • While the dough is brewing, prepare the filling. The choice of cheese varieties was dictated by the contents of the refrigerator. Three parmesan cheese with a fine grater, cut the remaining cheeses into small pieces, place the cheeses in a blender bowl. We also put parsley, dill, garlic, ricotta, salt, boiled eggs in the blender bowl. Beat the mass with a blender. I do not indicate the amount of ingredients taken, as I prepared more raw-vegetable mixture than is needed for baking "braids" (part of the mixture will be used for hot sandwiches or for baking churros).
  • It takes a long time to make real braids, so for very busy people, Tescoma has created many different forms for cutting dough. I used one of these forms (not because I was very busy today, but because laziness overcame with terrible force).

  • Make a deep notch on the bun (without fanaticism, otherwise we will cut the dough into small pieces). We put the braid for proofing for another 5-10 minutes. Lubricate the "braid" with egg yolk and sprinkle with sesame seeds.

  • Fill the grooves with the filling using the culinary bag.

  • We put the "braids" in an oven preheated to 200 degrees. We bake 7 minutes on the "Convection. Top-bottom" program. Reduce the temperature to 170 degrees and bake for another 10 minutes on the Top-Bottom program.
  • We take out the "braids" from the oven, cool them a little.

Yes, Ksyusha, I do not cut through to the end, there are quite deep holes. When re-proofing the dough, nothing shrinks (if only just a little), I keep it for about 5 minutes usually. You can generally do without re-proofing, so it will be even easier to fill with minced meat. You need to try to fill the whole depth with minced meat. Everything is done in a couple of minutes.
