Ingredients

dry yeast 3 g
wheat flour c. from. 300-320 g
water 100 g
milk 100 g
salt 4 g
sugar 20 g
vegetable oil 25 g
onion 50 g
raw smoked bacon 75 g

Cooking method

  • Mix yeast with flour (leave 1 tablespoon flour), add warm water and milk and sugar. Knead for 8-10 minutes. Leave for autolysis for 20 minutes.
  • At this time, sauté the onion in a little oil. Do not fry too much, it is enough that it becomes transparent and slightly golden. Finely chop the bacon.
  • Add salt, vegetable oil, sautéed onion and the remaining flour to the dough. Knead for 7-8 minutes, add bacon to the dough.
  • Leave the dough to ferment at room temperature for an hour and a half.
  • In the middle of fermentation, knead the dough once.

  • Put the finished dough on the table. Divide into the desired number of pieces. Round each piece.
  • Place the dough pieces in a baking sheet lined with baking paper.
  • Cover loosely with plastic wrap. Proofing - 50-60 minutes.
  • Bake the rolls in an oven preheated to 220C (convection 200C) degrees with steam for the first 8 minutes, then lower the temperature to 180C (convection 160C) degrees and bring to readiness.
