Vegetable stew with chicken fillet, pumpkin and cauliflower

Ingredients

Chicken breast (boiled) 1/2 pcs.
chicken broth 0.5 liter
Cauliflower 150-200 gr.
Carrots (large) 1 PC.
Potatoes (medium) 3-4 pcs.
Pumpkin 250-300 gr.
Tomato (large) 1 PC.
Sweet pepper 1 PC.
Onions (medium) 2-3 pcs.
Canned corn 1 can

Cooking method

  • Boil half of the chicken breast in salt water. Remove the meat, cool slightly, cut into pieces. In a saucepan with a thick bottom (I have a cauldron), pour a little vegetable oil, fry the finely chopped onion. Add carrots, grated on a coarse grater, simmer a little under the lid. Then add the tomato, peeled and diced, and the pepper, cut into strips, simmer for a couple of minutes. Add diced potatoes and pumpkin (I have pumpkin from the freezer, so I added it at the very end, because it cooks quickly), pour half a liter of chicken broth, close the lid and simmer over low heat until vegetables are soft. Then add cauliflower, disassembled into inflorescences, chicken and corn, mix everything and simmer until tender. Turn off the fire, add salt, pepper if necessary, cover and let it brew for 10-15 minutes. Serve with herbs

Note

Very bright, tasty and aromatic stew. It can be cooked completely without meat. You can take any other "spare" chicken instead of the breast. In any case, it will be delicious.
