Cooking method

  • The preparation time for the salad is no more than 15 minutes. Despite the speed of preparation, the salad is delicious.
  • I will divide the cooking technology into four stages, although in reality the first three stages are carried out simultaneously.
  • Cooking sun-dried tomatoes and cucumbers. Cherry tomatoes (you can take ordinary tomatoes) cut into halves, extract the juice and seeds, cut out the area near the stalk, cut each half in half again. Cut the cucumbers into thin slices, narrow strips or small cubes. Place prepared vegetables on a plate (always in one layer), sprinkle with salt, pepper and dry mixture "Italian herbs". As spices, you can take both Provencal herbs and French herbs. Vegetables should be quite spicy, then their taste will enrich the taste of the salad. We put it in the microwave (I chose the 600 mode) for 5 minutes.

  • Cooking grilled eggplant. We cut the eggplants into rings, grease with olive oil, grill (I do not indicate the time, since everyone has different grills and their capacities). If you don't have a grill, you can fry the eggplants in a regular pan (just don't take a lot of oil).

  • Cooking couscous. Pour hot water into a container, add salt, a little olive oil, lemon zest. Close with a lid and leave for about 7 minutes. As soon as the cereal absorbs the liquid, loosen the couscous with a fork.
  • Put chopped eggplants, tomatoes and cucumbers on a plate or in a salad bowl, sprinkle with olive oil (you need just a little oil), mix vegetables with couscous. Season the salad with lemon juice.

Note

It is imperative to add lemon juice to the salad, without it the taste is not at all the same.
I tried to make such a salad with grilled eggplants, but with fresh tomatoes and cucumbers. The version with sun-dried vegetables is much better!
If you don't like couscous, then you can try to make such a salad with rice or bulgur (it seems to me that it will turn out well too).

Important! If the cucumbers and tomatoes are cut coarsely and put in more than one layer, then five minutes in the microwave will not be enough, then you need to increase the time to 10 minutes (it is best to hold it for 5 minutes in the microwave, then hold it for a couple of minutes on the table, and another 5 minutes in microwave). Much depends on the type of vegetables and on the modes of your microwave.

Galina, and I really like this method, it turns out very quickly, and dried vegetables will always be at hand. I must say that I fell in love with sun-dried cucumbers, I can eat them just as an independent dish. And in vegetable salads, I prefer them over fresh ones! They brought me cucumbers here, but they put it generously so))) I wilted most of it, sprinkled it a little with butter, put it in a jar. I take it as needed (but today I specially dried it to show it in the recipe).
