Ingredients

Fresh lemons 3 pcs. average

White sugar 800 grams per kilogram of prepared citrus fruits

Cooking method

  • Jam - preparation for the new citrus harvest, for the fall. I decided to try the option of jam only from citrus fruits, how optimal the taste of jam will be entirely from citrus fruits, and moreover with grapefruits, and moreover with a peel.
  • Citrus jam in this performance for those who adore some bitterness of citrus peel and especially the bitterness of grapefruit.
  • And it is imperative that the jam contains whole crusts of citrus fruits, boiled like gummies "soft, and you want to chew them", so thin, transparent))) I love such crusts!))
  • Immerse lemons, oranges, grapefruits in hot water and rinse well with a vegetable detergent (special detergent for children's dishes and vegetables), and then rinse with plain water.
  • Cut off the buttocks from citrus fruits. Cut off the tops of the grapefruit more, remove the too thick and, moreover, soft, cotton layer in the upper part of the fruit.
  • Cut the fruit in half lengthwise into two pieces.
  • Cut the fruit into thin slices on a Berner grater using the thinnest nozzle. This will make a lot of thin slices, and a lot of juice.
  • Transfer the slices to a saucepan, select and remove the citrus pits. Strain the juice through a sieve to remove all seeds. Add juice to a saucepan to the slices.
  • Add white sugar to citrus fruits, at the rate of 800 grams of sugar per kilogram of slices, along with juice.
  • Put the pan on the fire, let the mass boil so that the sugar is completely dissolved - and remove from heat, leave on the table for a day.
  • The next day, put the pan on the fire, let the mass boil, reduce the heat to low-medium and boil the mass for about 30 minutes, until boiling, when the slices become transparent and soft to the bite.
  • Remove the pan from heat for a day, cover with a towel, let the mass gel.
  • After a day, it will be seen how the whole mass is well and tightly gelled, you can take it with a spoon in layers. And the taste of citrus jam appeared.
  • Heat the jam to a boil, boil for 10 minutes so that the mass becomes hot inside, and can be poured into jars. Close with lids, and put on the lids to cool.
  • Can be put away for storage.
