Lean mayonnaise (for zealous housewives)

Ingredients

Odorless vegetable oil 350 ml
Pickle from canned peas 150 ml
Sugar 1 teaspoon
Salt incomplete teaspoon
Vinegar (I have 9%) any of your choice 1 teaspoon
Lemon juice (can be substituted with vinegar) 1 teaspoon
Mustard ready incomplete teaspoon
Ground black pepper (without it) pinch

Cooking method

  • To make mynaise, you need a hand blender and a tall mixing glass.
  • Measure the vegetable oil into a container with a spout for easy oil addition during the process. Or you can use a bottle with a dispensing can.
  • Pour the brine from the peas into a glass (you can also use the liquid from canned beans), add all the other ingredients according to the recipe (except for oil). Beat lightly with a blender, literally a couple of seconds. Then turn on the blender at medium speed and pour in oil in a thin stream continuously. In the process, you can increase the speed of the blender. Usually, when the butter ends, the sauce is thickened and ready. I check the density - I make several movements with the blender up and down. That's it - the sauce is ready. If suddenly it seemed to you not enough thickness - add more oil. I usually whip up to the 500 ml mark.
  • The prepared sauce can be stored in the refrigerator for up to 7 days. On the second day it becomes thicker and tastier, but you can use it right away, of course.

The recipe is intended primarily for those who, for some reason, do not eat eggs. I confess, raw eggs embarrass me - I'm not always sure of their freshness. The liquid from the peas has always been poured out (like many), and now it's a pity The taste of the peas is certainly felt, but not annoying, and if peas go into the salad, then it's absolutely wonderful!
