Ingredients

pumpkin puree 1 tbsp.
egg 1 PC.
flour 1 tbsp.
sugar 1 tbsp. l.
baking powder 1/2 tsp
sunflower oil 1 tbsp. l.

Cooking method

  • In fact, these are pancakes with pumpkin, but with my variations.
  • First you need to prepare the pumpkin. To do this, a large piece of pumpkin with the skin is wrapped in foil and baked for about an hour. The finished pumpkin is scooped out of the peel with a spoon and turns into a homogeneous mass in a blender. The resulting puree is perfectly stored in the freezer. I like it this way, although you can just finely grate the pumpkin.
  • Mix all the liquid ingredients and sugar, add the flour mixed with baking powder and mix a little, without kneading until smooth. Leave the dough to stand for a while, then fry over medium heat in a dry frying pan. Pour the finished pancakes with honey.

How do I process pumpkin? Likewise - I bake, but not in foil.
So, I bought it, I brought it. I washed, cleaned the seeds, if a small one - cut it in half, if I cut a large one into several parts. All this on a baking sheet + a glass of water and in an oven with a temperature of 220 degrees. The pumpkin is baked. If necessary, add some HOT water. The result is a soft inside, which is perfectly scraped off the crust with a regular spoon. I put this pulp in a container with a lid and store it in the freezer. It is necessary - I took it out, took a part and use it.

This is the pulp that I use to make my pancakes.

What do they need:

pumpkin - about 600 g (baked, scraped flesh)
eggs - 2 pcs
salt-1/2 tsp
sugar - 2 - 4 tbsp. l. (for an amateur)
vanilla sugar - 1 sachet
cinnamon - 1 tsp with a slide (for an amateur)
pineapple / orange / apple (no difference, if only sour) juice - 1/4 cup (my secret)
flour - 2-4 cups (as it takes)
baking powder - 1 tsp.

What we do:

Pumpkin + eggs + sugar + salt + cinnamon + vanilla + juice = beat in a blender until fluffy. Add baking powder to the first cup of flour. Gradually add flour to make a dough like thick sour cream.
The dough is ready. Now only fry with vegetable oil, over medium heat, until golden brown. And that's all. With sour cream, with maple syrup, with jam, JUST SO - a meal. And always lush, airy.
