Cooking method

  • We cook aspic as usual and to whom, as usual - just in a saucepan on the stove for a long time, or in your favorite pressure cooker and quickly. I cook in a saucepan, it takes much longer, but it is more convenient to gradually remove the fat during the cooking process. As a result, jellied meat is almost dietary. Pull the chicken meat out of the broth as soon as it is ready, do not forget about the bay leaf - toss it into the broth 10 minutes before cooking. Cutting the finished jellied meat is a separate long story. Remove ALL SKIN and FAT. All bones are carefully freed from meat and boiled cartilage. Finely chop the meat-cartilaginous mass with a knife or pass through a meat grinder with a large lattice, you can blend it a little, add salt, if necessary, squeeze the garlic. Mix everything and add broth, well strained from onions, carrots, peppers and bay leaves. Bring the mass to a mushy consistency. Pour the finished jellied meat into the mold and into the refrigerator overnight. In the morning, from the frozen jellied meat on top, mercilessly remove the last small layer of fat and turn the mold onto a plate - and here I have on my table a delicious dietary jelly in the form of an appetizing piglet.Aspic Three little pigs

Cooking, depending on the volume, up to 6-7 hours. Analysis for about an hour and a half. Freezing in the refrigerator for 8-10 hours.
