Octopus cutlets

Ingredients

octopus 1 kg
flour (corn) 250 ml
eggs 3 pcs
dill 1 bundle
leek 1 bundle
garlic 3-4 slices
salt pepper pinch
vegetable oil for frying

Cooking method

  • My husband's successful spearfishing prompted me to a culinary feat.
  • Octopus cutlets
  • A gorgeous specimen of an octopus was obtained. The idea arose to fry cutlets from it.
  • After reviewing many recipes, we got such a mix.
  • These cutlets were eaten by everyone, even those who do not really like seafood.
  • We wash the octopus and turn it through a meat grinder.

  • If you have time, let the liquid drain from the ground minced meat, about 2 hours.
  • This moment will facilitate the frying process, there will be less splashes.
  • Finely chop the dill, leek. Press the garlic with the flat side of a knife and chop finely (you can use a garlic press).
  • Add flour, yolks and the resulting mixture of herbs to the minced meat.
  • Salt carefully, the octopus meat is already salty in itself.

  • Mix everything well.
  • Beat the whites in a separate container until they are firmly foamy and add to the minced meat.

  • Gently mix the proteins into the minced meat.
  • The consistency of the minced meat becomes similar to the dough for pancakes.

  • Heat oil in a frying pan.
  • The temperature for frying is moderate.
  • Put the minced meat in a spoon and put it in the pan.

  • Fry on both sides until golden brown.
  • At the end of frying, cover the other side of the cutlet with a lid and hold for 1-2 minutes.
  • Fried patties can be laid out on a sheet of paper to remove excess fat.

Note

Once I forgot to beat the whites, the minced meat turned out to be denser and it was already possible to form cutlets by hand. Dried in rice flour before frying.
