Baked strawberry ice cream with balsamic glaze

Ingredients

450 g strawberries (can be frozen)
3 tbsp. l. balsamic glaze (can be substituted with good balsamic vinegar)
2 tbsp. l. lemon juice
1 tbsp. l. brown sugar
500 ml very cold cream from 33% fat
300 ml condensed milk

Cooking method

  • Everyone's favorite strawberry ice cream in a new look.
  • The balsamic glaze gives this dietary dessert a refreshingly spicy new flavor.
  • Baked strawberry ice cream with balsamic glaze
  • 1. Wash the strawberries, cut in half, and place in a baking dish lined with baking paper. Pour balsamic glaze on top, add lemon juice and sugar, mix everything thoroughly. Bake at 180C for about 40 minutes, stirring occasionally. The strawberries should be completely soft and slightly caramelized.
  • 2. Cool the finished strawberries and beat with a blender until the most homogeneous state is obtained. Refrigerate until use.
  • 3. Pour cold cream into a mixing bowl and place in the freezer for 15-20 minutes, whisk can also be cooled additionally.
  • 4. Whisk the cream until hard peaks, add the condensed milk and beat the whole mass again at low speed so that the condensed milk mixes well with the cream.
  • 5. Add strawberry puree, stir with a spatula.
  • 6. Transfer the entire mixture to a container with a lid and place in the freezer. After 1.5-2 hours, punch with a blender, put it back into the freezer. Repeat this operation 2 more times.

  • If you have an ice cream maker, follow your ice cream maker's instructions.
  • My attachment is a Kenwood ice cream maker, so we didn't wait for a few hours, enjoyed it in half an hour

I didn't bake strawberries, I took fresh ones. It seemed a little sweet, probably because I didn't add balsamic vinegar and lemon juice. My husband liked it. I cooked without an ice cream maker.
