Krasnodar sauce

Ingredients

tomato 2 kg.
apples (antonovka) 5 pieces.
sweet red pepper 5 pieces.
sugar 0.5 tbsp.
salt 1 tbsp. l.
cinnamon 1 tsp
carnation 0.5 tsp
ground red hot pepper 0.5 tsp
ground black pepper 0.5 tsp
vinegar 50 ml.

Cooking method

  • I give the recipe just make three portions at once. Since one outlet is 2 liters.
  • Grind tomatoes, apples and peppers in a meat grinder and simmer for 2 hours to boil well. Let cool and mix with a blender. Add salt, sugar and spices and simmer for another 30 minutes. In 10 minutes. before the end of cooking, pour in vinegar and pour into sterilized jars. Pleasant))))

simplification of the process = tomatoes, apples and peppers are cut as on anything - with a knife, a burner, a food processor, folded into cooking utensils + salt, sugar, mixed intensively, given juice, boiled like jam, until the food is ready, + spices at will and taste, right in the same saucepan, without turning off the heating, everything is blended (an immersion blender with a metal leg) hot and immediately poured into dry jars / bottles for spinning and under a fur coat = no double heating, everything is done at once
I do not add vinegar, tomatoes can completely preserve themselves

I cook these 50-60 liters of ketchup sauces, everything is at home, my husband's favorite jars
