Wheat-rye bread a la Borodinsky

Ingredients

Rye flour 150 grams
Wheat flour 250 grams
Rye red malt 3 tablespoons
Homemade kefir 100 milliliters
Dark liquid honey 3 tablespoons
Salt 1 teaspoon
Cumin (seeds) 1 tablespoon
Olive oil 2 tablespoons
Dry yeast 2 teaspoons
Ground coriander 1 pinch
Boiling water for steaming malt 150 milliliters

Cooking method

  • In the beginning, I will explain, the bread recipe appeared after trial and error, and is a combination of many recipes, including from this site, and in no way claim to be authorship.
  • My family was pleased with the result and decided to share it with you.
  • We take a deep, wide cup and pour 3 tablespoons of rye malt into it (Red Kolobok malt was available) and brew it with 150 milliliters of boiling water, pour 1 tablespoon of caraway seeds there and mix everything thoroughly and let the malt brew for 10 minutes cover the cup ...
  • Sift strictly by weight 150 grams of rye flour, and 250 grams of wheat flour.
  • Pour homemade kefir warmed to room temperature into a bucket of a bread machine, put the brewed malt with caraway seeds in the same place, add 2 tablespoons of olive oil, pour 150 grams of rye flour, pour 1 teaspoon of salt, pour wheat flour on top, pour liquid honey of dark varieties (at me melted angelica honey), the last we add dry yeast (SAF-Moment) 2 teaspoons.
  • The priority of placing liquid and dry components follows according to the instructions of the bread machine. I have a "Redmond RBM-M1911" and the liquid components are applied first.
  • We set mode 6 "Borodino bread" for 3 hours, after the stove signal, sprinkle the already formed kolobok with a pinch of ground coriander. After 3 hours, take out the finished bread and let it cool on a wire rack under a towel.

The dish is designed for
