Strawberry Dream Cake

Ingredients

Biscuit:
Chicken eggs 4 things.
Sugar 190 g
Vanilla sugar 10 gr.
Flour 170 g

Impregnation
Liquor Limoncello 20 ml.
Syrup 20 ml.
Fresh strawberries 600 gr. (I probably ate a third)
Mousse:
Yolks 4 things.
Sugar 200gr.
Cream 12% 250 ml.
Milk 250 ml.
Flour (cornstarch can be used) 40 gr.
Vanilla sugar 20 gr.
Cream 33% 200 ml.
Powdered sugar 1 tbsp. l. (not measured)
Gelatin 25 gr.
Chocolate glaze:
Cream 21% 100ml
White chocolate 80 gr.
Gelatin 5 gr.
Cold boiled water 25 gr.
Mint color 3 drops

Cooking method

  • This recipe is nothing new. And nothing is mine. In addition to combining recipes that have been invented before me and everyone has long known. But it may very well be that in this world someone else loves strawberries as much as I do and dislikes fatty creams and mousses with butter just as much as I do ... And maybe someone else - then in this world, like me, dreams did not come true for a long time and he was tired of it ... And suddenly this unpretentious improvisation of mine, in which my very, very old dream, which once seemed absolutely unattainable to me ...
  • So, how it was with me and how easily you can do it if you want the Dream to come true ...
  • Cooking a biscuit. This can be absolutely any biscuit that you like and which you are good at. I chose Vanilla biscuit on boiling water according to our recipe irza... Ira, another big thank you for this recipe :))) Here it is https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=84460.0 The recipe is wonderful and very detailed, so I will not repeat myself, I will only draw your attention to the fact that I put more flour, I did not put baking powder at all, and instead of water I added boiling milk to the dough. In addition, I am sure that half of the forum has already noticed my unhealthy craving for alcohol, so it makes no sense to hide that I added another 20 ml to the biscuit dough when beating eggs. egg liqueur :)
  • I made the biscuit in the evening and collected the cake the next day.
  • We start this process by making mousse, but first wash, clean and lay out our favorite strawberries on a paper towel.
  • Next, soak 25 gr. gelatin at 115-120 gr. cold boiled water.
  • Then we cook the usual custard on the yolks:
  • Place 250 ml in a saucepan. milk and 250 ml. cream 12%. Add 100 grams to them. sugar and put on fire, bring to a boil.
  • In another container, we just mix (without fanaticism and whipping) 4 yolks (I had an attack of generosity, I boiled and booted all 5), another 100 gr. sugar, 10 gr. vanilla sugar and 40 gr. sifted flour (which, depending on your personal preferences and beliefs, you can safely replace with cornstarch, or you can not put either one or the other at all). If it is difficult to mix, add a little milk and cream, which are warming themselves on the fire and do not bother anyone :)))
  • Then, when the milk and cream have boiled, you need to gradually introduce them into the yolk mixture in a thin stream, slowly, stirring it vigorously all the time. I pour in milk in parts: I poured in two spoons - mixed, two more - mixed, and so on. When all the milk is poured into the yolks with sugar and flour, again pour this mixture into a saucepan, return it to a low heat and, stirring constantly, cook until thickened.
  • Then remove from heat and leave to cool, covering the surface of the cream with cling film in contact.As you know, I am insanely lazy, so I don't cover anything with a film (in our house, only dotsya can handle cling film in general), but I just put a few slices of butter on the surface of the cream, it melts from the heat of the cream and does not allow a crust to form.
  • Into the slightly cooled cream (well, somewhere up to 60 degrees), add the swollen gelatin and mix well. If you gape and the cream has cooled down more, it doesn't matter, heat the gelatin in the microwave for about 30 seconds (but in no case overheat or boil) and pour into the cream, again mix well.
  • Then place 33% cream and a whisk from the mixer in the freezer for 15 minutes, it is also advisable to send the bowl from the mixer to the refrigerator.
  • The biscuit needs to be cut into three or four pieces, depending on how high the cake layers you want to see in your cake. We use only two cakes. I cut my biscuit into three cakes. The top cake was defective, because after baking, I did not turn the biscuit to cool upside down, and it fell heavily in the middle: ((It's a shame, but true :( Having survived this blow to my culinary reputation and four times ruthlessly dismissed myself from my post Favorite Home Confectioner (without severance pay, essssno), I put the middle cake in a pastry ring, the sides of which I laid with a border tape (you can use cling film, you can use a regular file cut at the required height).
  • I fixed the ring along the diameter of the cake, soaked the cake and along its edge, one to one, neatly (as I thought then) laid the halves of the strawberries. Like this

  • During the time while I was having so much fun, my cream cooled down and, adding 10 gr. vanilla sugar and a tablespoon of powdered sugar, I beat them until soft peaks.
  • Then add the cream in parts to the cooled custard base, gently mix it all from bottom to top and fill the stacked strawberries with part of our mousse.
  • Then we put the strawberries in the middle of the cake as it seems to you right, and fill in the remaining mousse (I left some of the mousse for pouring on the second cake). We put the poured mousse in the refrigerator for 10 minutes, during this time we saturate the second cake, after 10 minutes we put it on the mousse, slightly pressing it, and pour and level the rest of the mousse on the second cake (you can not do this).
  • We put the cake in the refrigerator until the mousse solidifies completely (it was a night for me).
  • In the morning, I cooked chocolate icing according to a completely simple and wonderful recipe that I found on the Internet. True, I also slightly altered it, so I am telling you already as it was:
  • 5 gr. soaked gelatin in 25 gr. cold boiled water and left to swell.
  • 100 ml. 21% of cream was brought to a boil (but not boiled).
  • I broke 80 gr. Into hot cream. white aerated chocolate and a drip of dye.
  • Mixed well, cooled slightly, added gelatin, mixed well again and filtered through a fine sieve twice.
  • Chilled to a temperature of 30 degrees and poured onto the surface of the cake.
  • I put the cake in the refrigerator for another 3 hours.
  • Next, the most interesting thing is decoration.
  • You can decorate the cake while the frosting has not yet frozen, but I did not succeed and my father and I conjured over the already frozen frosting. You, of course, will decorate the cake according to your wishes and mood, completely falling out of reality for some happy half-hour :))) Today we have participated in the decoration: fresh strawberries, grapes, cherries, mint, hazelnuts in chocolate, dried cranberries and marshmallows ...

All the time, something interfered with me, something distracted and hindered, so much so that I was already beginning to think that it was probably not destiny.But one fine spring day I realized that an unfulfilled dream is a heavy burden, and in In this particular case, I won't even have anyone to blame for my shameful inaction. And, angry with myself and with the circumstances that hindered me, I realized this dream of mine - and I didn't believe myself ...
