Pumpkin-apple bread with lavender (cold fermentation)

Ingredients

Pumpkin puree 100 ml.
Apple juice 150-170 ml.
Whole grain wheat flour 200 gr.
Wheat flour, premium 250 gr.
Honey 2 tbsp. l
Salt 1 tsp
Vegetable oil 1.5 tbsp. l
Dry lavender 2 tsp
Dry yeast 1.5 tsp

Cooking method

  • Add all the ingredients to the maker's bucket according to the instructions. (Do not pour out all the juice at once, only 150 ml., The rest during kneading. You may not need to add, depending on the flour)... Turn on the kneading of any program (for example Pelmeni), as soon as the dough is collected in a bun, turn off the program. Leave the dough for 10 minutes. Then turn the kneading on again. Knead for about 15 minutes (I have a programmable stove, so I specially created a program). At the end of the program, put the dough into a bowl greased with vegetable oil, cover with a film on top, put in the refrigerator overnight. In the morning, take the dough out of the refrigerator, let it warm up at room temperature for about 30 minutes. Form a piece of bread, put it in a warm place for proofing, until it grows 3 times (I let it sit in the basket with the seam up, then gently turned it over on a baking sheet). Bake at 220 degrees for 10 minutes, then lower the temperature to 180 and bake until tender (it took me 25 minutes). Cool the finished bread completely on the wire rack

Note

The recipe is my improvisation. It was necessary to urgently attach pumpkin puree and the remnants of store juice. The bread turned out to be incredibly aromatic and tasty. There was such an apple-lavender aroma when baking.
