Chicken roll with prunes and walnuts

Ingredients

Broiler chicken without legs 1 PC.
Prunes 5 pieces.
Walnut 3 nuts (6 halves)
Salt, ground black pepper taste
Nutmeg pinch
Garlic 1 clove
Ground sweet paprika and turmeric for caller

Cooking method

  • I had a chicken whose legs were used in another dish. It was decided to make a roll from the remainder.
  • I removed all the skin from the chicken, except for the wings. The incision was made along the breast, but it is also possible along the ridge, it is not so important. Here's a flap turned out. I show it because, firstly, I promised to show it in another recipe, and secondly, I make it clear that any "material" can produce a good result.

  • I separated the meat from the breast and removed some meat along the ridge, from the sides.
  • She opened two lobes of the breast like a "book".
  • Salted and pepper the meat, seasoned with nutmeg and rubbed with garlic.
  • Prunes (it is better to take soft or pre-soak for 2 hours in water) and cut the walnuts coarsely.
  • Then I spread the prepared chicken fillet on the skin. And on top I spread chopped prunes and nuts.

  • Starting from the edge "from where the legs grow", I wrapped it in a tight roll.
  • Chicken roll with prunes and walnuts
  • Tied it with culinary thread, you can use silicone tourniquets or put on a large-caliber mesh. I ran out of a large mesh, so I just tied it up with a thread.
  • Chicken roll with prunes and walnuts
  • I put the roll in a baking dish (you can just on the foil). Greased the roll with a little vegetable oil and sprinkled with paprika and turmeric for color. This time I also added sliced and seasoned potatoes to the mold. 2 in 1 so to speak.
  • Chicken roll with prunes and walnuts
  • I baked the roll in the oven (you can use any other device) at 180 * C to an internal temperature of 90 * C (60-80 minutes).
  • Chicken roll with prunes and walnuts
  • Remove the net or thread from the finished roll, cut the roll in portions and serve hot with a side dish or cold as a snack.

  • Bon Appetit!
