Ingredients

Dough:
Flour (I have Makfa) 430 g
Dry yeast (fast Saf-Moment) 3 g
Fine salt 7 g
Warm water 300 ml
Filling:
Fresh herbs (dill, parsley) 60-70 g
Fresh garlic 5 teeth
Butter 72% 20-25 g
Salt 1/3 tsp
Ground pepper (black or white) pinch
Hard cheese 30-40 g

  • The other day, in one of the culinary TV shows, I saw ... I do not know what it is called ... the TV worked with minimal sound, but it was noisy in my kitchen, and from the whole recipe I heard only: "... anchovy paste ".
  • Are you not getting the connection to my recipe too?
  • So I did not immediately catch it, but my head was already working, tirelessly!
  • So, everything happened like in a silent movie, but after all, we, the Khlebopechkin people, are a shabby people and our eyes are drawn. You just give us an idea, and then we will settle it ourselves ...
  • Well, I sorted it out: not finding anything in the refrigerator that even approximately resembled anchovy paste (yes, actually, I didn't really want to ... think ...), I decided that it would be even tastier with herbs and garlic than with this bourgeois pasta from some kind of sprat!
  • And since I didn't even have a vague idea of ​​the dough recipe (I only saw that it was yeast), and in addition I really wanted a hot Uzbek flatbread, it’s not hard to guess why it suddenly hit me in the head.
  • Today I baked these rolls for the second time, and I like this recipe because it does not require my long participation. Proofing takes most of the time.
  • So, we knead the dough from the indicated ingredients, simply by combining it all in a bowl of a dough mixer. Knead with a hook at low speed for 8 minutes. The dough turns out to be very soft and slightly sticky, on the hook, when picked up, it does not hold, but slides - this is how it should be.
  • Next, we collect it into a ball

  • and right in the bowl, covered with a bag or plate, so that the dough does not wind up, we send the whole thing to a warm place (I put it in the oven at 35C) and forget about it for 2-2.5 hours. Unlike the preparation of classic tortillas, in this recipe, no manipulations with the dough (settling or folding an envelope) are required during proving. It just stands up.
  • After 2.5 hours, the dough has almost tripled:

  • Now we quickly prepare the filling (you can make it in advance): chop the greens, add crushed garlic to it, salt, pepper and mix with melted butter, which, if desired, can be replaced with 1-2 tbsp. l. mayonnaise - the taste will be brighter. Everything, the filling is ready.
  • We take out the dough, put it on a table dusted with flour, put it in a ball, and roll it out with a rolling pin into a rectangular layer about 45x30 cm in size.The dough is very soft, pliable, it can be spread with your hands on the table, but with a rolling pin it rolls out more evenly and faster - literally in several movements.
  • We spread our filling on the dough and distribute it over the entire layer:

  • Now we roll up the layer into a roll along the long side, pinch the seams and transfer it to the board (or leave it on the table if you can cut it on it).
  • I baked rolls in a Princess pizza maker. And before you put the workpieces into it, you need to heat it up a little: turn it on for just a few seconds, so that the surfaces become warm.
  • Now we cut our roll into washers with a thickness of about 2 cm, and each separately we transfer on a knife to the Princess.
  • The dough is very soft and the rolls do not hold their shape well, but that doesn't matter to us.

  • Now we lightly crush them with our fingers so that they fit more or less evenly:

  • And we leave to part in a warm Princess for 1 hour (you can also for 30 minutes)
  • Meanwhile, rub the cheese on a fine grater. We need very little of it and in a small form it can be distributed in a thin layer over the surface of the rolls. Thus, after baking, a very thin crisp is formed. And if you plump too much cheese, then the crust will turn out to be tough, while we need the rolls to be tender.
  • So the time has come. The dough rose decently. We fill our rolls with cheese. In this photo, the dough after an hour of proofing:

  • But, to be honest, a half-hour proofing also gives a normal result, just fifteen minutes later you need to turn on the Princess again for a few seconds to keep warm, then things will go faster. On all pictures "with a cut", the dough after half an hour of proofing. Everything rose and baked beautifully.
  • Now we turn on the Princess for 10 minutes. Then we turn it off and, without opening the lid, let it stand for another 5 minutes.

  • There is no need to wait for it to brown. It baked beautifully and now has a very delicate texture. If you overexpose it, then we get not soft rolls with a thin crispy cheese crust, but a rubber substance with a hard crust.
  • That, in fact, is all. The recipe is not at all complicated and not time consuming, I would even say, easy!

The dough is kneaded, I take it out of the bread maker after 10-15 minutes and on the cutting table - I divide it into larger and smaller koloboks. The smaller one is stretched in a thin layer of a circle of about 27-28 cm, lightly greased with tomato sauce.
I roll out the larger bun 15cm wide and probably 30cm long, a thin layer of sauce, and today for Elenochka greens with garlic,
I spread a string of mozzarella soft cheese along the entire length, my husband is a lover of raw chorizo ​​sausages, literally by a little, it is very spicy, and be sure to pepperoni the sausage, just a few strips of sweet pepper, roll it into a roll and immediately cut it into 16 rolls and spread it around the circumference of the pizza. On the pizza circle itself - Elena's greens, again a lot of soft mozzarella, between the pieces of cheese - a couple of pepperoni, a little raw chorizo, olives and strips of sweet pepper, mushrooms, wax everything there is. I move it to a stone warmed up to 500F (I think it's 240C), and immediately I decrease the temperature to 450F (probably 220C)
after 15 minutes I open and sprinkle with grated cheese and for another 5 minutes, but it all depends on the oven.
It turns out a pizza pie, very large and beautiful, delicious, the dough is very soft and airy, eat and want more.
I can't even handle it myself IN-OUT because of its huge size, I have to use a grateful eating assistant.
The dough is enough for two regular-sized flat pizzas.

P.S. more urgent pizza - flour, Yeast, salt, sugar into the processor, pour cold milk into the hole, (it will warm up during the kneading process) olive oil on the finished bun, put the dough in a bag and cover with a towel, I have a special program in the oven for proving the dough. While I have prepared the filling, the dough is ready. Everything is easier than a steamed turnip.
