Pumpkin pie with citrus flavor on curd dough

Ingredients

Flour 200 g
Starch 100 g
Butter or margarine 200 (180g)
Egg 2 pcs.
Curd 5-9% 300 g
Sugar 2 tbsp. l.
Soda slaked with vinegar 0.5 tsp (I have 1.5 teaspoons of baking powder
FILLING: Sweet pumpkin 500-600 g
Sugar 2-3 st. l.
Lemon juice 0.5 lemon
Cinnamon and / or (nutmeg) 1 tsp (pinch)
Corn starch 3 tbsp. l.
Raisins and rum (2 tbsp. L.) optional
Vanilla sugar 2 tsp
Lemon zest 1 PC.

Cooking method

  • Delicious, very airy and delicate pie for pumpkin lovers.
  • - Rub the peeled pumpkin on a coarse grater, mix with sugar, vanilla sugar, zest, add lemon juice to taste. Sprinkle with starch. You should definitely try the filling and season to your taste. I like a lot of zest and is sweet enough because pumpkin tastes faceless. You can add raisins and a spoonful of rum. We put it in the refrigerator.

  • - Rub the butter with eggs, sugar and a pinch of salt white. Then add the grated cottage cheese. It should be free of lumps and dry enough. I did all this in stages in the attachment of a Kenwood combine with a spinning knife.
  • - Mix flour with starch and baking powder. You can use only flour, but with starch, it seems to me, it turns out more luxuriant and tender.We combine everything in a lump and put it in the refrigerator for half an hour. The dough is sticky and soft. Do not knead it too much, otherwise it will become dense after baking.

  • We distribute 2/3 of the dough in the mold with damp hands (preferably on paper), make the sides, lay out the filling and cover with the remaining dough. I don’t always guess the quantity, so sometimes the pie is completely sealed, and sometimes it’s the same as in the photo, when I just sketched flat pieces of dough on the filling. We like it even better.

  • - Bake at 180 C for about 30 minutes until golden brown. We carefully remove the cake from the mold along with the paper on a wooden board or wire rack. The bottom quickly sticks, watch the temperature - the ovens are all different!
  • - Make sure the cake is completely cool. Can be decorated with powdered sugar.

Note

The dough can be salted. The filling tastes tender, "live". The filling can be boiled, boiled with an additional amount of sugar, then it will look like dried apricots.
I make the filling twice at once, I freeze one part.
