Pumpkin puree soup with mushrooms (lean)

Ingredients

raw peeled pumpkin 500 grams
turnip onion 1 piece
mushrooms 100g
vegetable oil 3-4 tbsp. spoons
water 400 gram
salt taste
nutmeg pinch
pepper mix pinch
roasted pumpkin seeds option
croutons (croutons) option
greens option
fried mushrooms option

Cooking method

  • Cut the pumpkin into small pieces.
  • Chop the onion and mushrooms at random.
  • Heat the oil in a frying pan.
  • Fry the onions until transparent.
  • Add pumpkin and mushrooms.
  • Fry everything lightly.
  • Transfer to a saucepan, add water.
  • Bring vegetables and mushrooms over low heat until tender.
  • Season with salt, pepper and nutmeg.
  • Purée.
  • Serve with fried mushrooms, pumpkin seeds and herbs.

I took white mushrooms, it turned out a fragrant and rich taste! The texture is silky, the croutons are sprinkled with olive oil infused with white truffle and baked in the oven - the oil gave an additional bright accent!
There is no photo, as the soup flew away in a matter of minutes! Tomorrow I will repeat it without fail and will do more so that I can have lunch and dinner with this soup!

Thanks for the idea to add mushrooms! I often cook pumpkin puree soup for myself, I love it. I never added mushrooms.I think if you fry them all together before mashed potatoes it will be even tastier.And I also like sweet soups-mashed potatoes ...
