Vegetable caviar Easier than steamed turnip

Ingredients

Turnip 3 pcs. medium size
Bulb onions 1 PC
Garlic 2 - 3 slices
Spices: bay leaf, allspice, black pepper
Tomato paste To taste (I have 2 tablespoons)

Cooking method

  • Peel the boiled turnip in a uniform, grate. You can peel, cut and boil raw. I didn't like frying raw immediately. Throw bay leaf and pepper into hot vegetable oil. When you smell a pleasant smell of spices, remove them from the pan and fry in this oil, adding alternately chopped garlic, onions and grated turnips. Then add tomato paste to taste and simmer a little, evaporating the liquid. Season with salt and pepper to taste. Grind the finished caviar with a blender (I did this right in the pan).

The recipe was not accidentally born during the fast. I prepared carrot caviar for my mother according to this recipe; all generations of our family love it very much. But, since heat-treated carrots, as you know, have a high glycemic index, and I really wanted something similar, but acceptable within the framework of Sybarite, a turnip emerged from the depths of the subconscious. Her taste and smell, to put it mildly, is peculiar. And the task was to level it as much as possible due to spices and other components, while maintaining a large amount of useful fiber in the finished product. Which is exactly what happened.
You can use it on a piece of bread (according to your preferences), or as a vegetable side dish for meat or porridge.

Carrot is just love since childhood. But interesting: carrot is delicious from boiled in a uniform, while beetroot is delicious from raw fried beets. And it wasn't chopped with a blender. Now, for the same reasons, I don't eat beetroot. Beets - only raw, grated into porridge and drenched in vinegar. I add to ready-made cabbage soup - I get a plate of borscht.
